This simple, lettuce-less Greek side salad is a flavorful family favorite. Perfect as a side dish to any meal, or serve with grilled chicken to make it a main event.<\/em><\/p>\n <\/p>\n What dish will always remind you of childhood? <\/p>\n For me, there are several: Mom’s blueberry cobbler. Lemon herb and buttered broccoli. Marinated chicken and noodles<\/a><\/span>. Chicken schezwan. Mom’s spaghetti sauce<\/a>.<\/span> Fresh tomatoes with balsamic vinegar, salt and pepper. And perhaps even hot and sour soup and chicken and broccoli from Happy China II.<\/p>\n Bites of any of these dishes transport me back to a wonderful time in life and fill me with happy feelings. <\/p>\n I often think about what foods will give that same feeling to my girls one day. Food is powerful and it connects us, even through the passage of time.<\/p>\n Some foods I choose to make with the hope that they’ll remember them with a smile. Like how I make homemade chicken and veggie soup when they don’t feel well and how we bake chocolate chip cookies every Christmas Eve (because Santa told Hailey when she was 2 that they are his favorite).<\/p>\n I like to think that they’ll think back fondly on our weekly fajita night and how much they love the spaghetti sauce that mom ate when she was growing up, too.<\/p>\n Unfortunately I also imagine they will remember how they had to eat raw garlic at the first sign of a throat tickle<\/a><\/span>, too.<\/p>\n There is another dish I’m confident will rank high in their memories– this Cucumber and Tomato Greek Salad. <\/p>\n <\/p>\n This lettuce-less Greek salad is one of those side dishes that I’ll start assembling and then hear squeals of excitement as the girls roll into the kitchen and realize what I’m making for dinner. It’s a really simple salad that I’ve been making forever by taste, but I finally wrote down the amount of ingredients so I could share it with you.<\/p>\n There is no wrong way to eat this salad- shoot, I’ve had it for breakfast more often that I can count, but here are a few of our favorite ways to serve it:<\/p>\n The best thing about this salad is that you can customize it any way you like. I like to add sliced pepperoncinis for spice if the kids aren’t eating it. Sometimes I put it over chopped romaine to make it go a little further. Sometimes I’ll add chopped red peppers if I have some on hand. Make it your own!<\/p>\n I hope you and your family enjoy this simple cucumber and tomato Greek salad as much as we do.
