Good Tuesday morning to you! I hope my fellow Americans had a nice Memorial Day. We decorated in red, white, and blue, made sure the girls knew that the holiday is about our gratitude to the American soldiers that gave their lives fighting for our freedom and not just the unofficial kick off to summer, but otherwise kept things really low key.<\/p>\n\n\n\n
I don’t think we’ve ever had a Memorial Day weekend quite like this one, where it stayed 60 degrees and raining the entire time. Well, until yesterday late afternoon when a little sunshine poked through and we all ran outside as fast as we could to soak it up; Finley leading the pack.<\/p>\n\n\n\n
But still, it was a nice weekend of pizza night and family time Friday, friends over for fun on Saturday, a trip to the movies Sunday, and relaxed day at home Monday where we actually got some things done that we needed to. I hope you had a nice weekend as well!<\/p>\n\n\n\n
I used my last pack of “steak for fajitas” that we got from our cow share last summer, and I still don’t know the cut of meat it is, but it’s great for fajitas! I marinated the meat in this marinade<\/a>, then cooked it stove top. Then I put it over greens with sauteed peppers and onions, black beans, avocado, sour cream, and salsa. <\/p>\n\n\n\n
