Good morning; how was your weekend? We stuck around the house a lot, which was nice. Time to go on walks (and get caught in sneaky spring rain), work on a couple projects (replacing the light fixtures in the master closet and meeting with a designer about some ideas to spruce up the kitchen), and play some games (Taco Cat Goat Cheese Pizza<\/a> and Kaitlyn’s pick of Monopoly). <\/p>\n\n\n\n For Mother’s Day we went to church, then David took the kids and Finley to a park for a couple hours so I could get things done. We played tennis together in the afternoon, they prepared a yummy salmon dinner, and then we all crashed onto the couch. Maybe it’s pollen but we were worn out. We watched an episode of Alone (the survival show that we enjoy watching together) and all went to bed early.<\/p>\n\n\n\n I hope all you mamas out there felt appreciated on Mother’s Day. Your work is so important. And for those who experience heartache on a day like Mother’s Day, I hope you felt seen and yet gave yourself the space you needed. Holidays can be tricky with every year older we get, a combination of leaning harder into the joy they bring and breathing through the heartache they can cause.<\/p>\n\n\n\n Cod fish taco bowls because apparently I prefer everything over rice rather than in a wrap these days. I made a simple beer batter consisting of 12 oz beer, 1 c flour, and 1 egg, then salt and peppered the cod, dipped it in the batter, and pan fried it in about a 1\/2 inch of oil, 4 minutes per side. I served it over rice with a quick slaw made of cabbage, sour cream, mayo, lime juice, salt and pepper. Topped with green onions and cilantro.<\/p>\n\n\n\nMonday<\/h2>\n\n\n\n
