Usually these posts are titled- meal ideas! But really, my cooking has been sporadic. Like I mentioned in my grocery spending review, we were all over the place in June. We still ate most meals at home, but there were a few more lunches out. And when we were at home, some dinners were just “whatever you can find,” AKA popcorn from the air popper that we are all currently obsessed with.

But in between eating popcorn for dinner and traveling out west, we did eat some cooked meals at home. Here’s a peek into what I’ve been eating lately in SUMM-AH!

""
Avocado on overnight country blonde sourdough from Flour Water Salt Yeast with a squeeze of lemon, Celtic salt, and EBTB seasoning.

""
Easy tuna salad on overnight country blonde sourdough with a tomato slice and melted sharp cheddar.

""
Cookout at a friends house with grilled wings, Costco’s potato salad, and the best kale salad ever from Fresh Chef.

""
Bread machine pizza dough with red sauce, fresh and shredded mozzarella, mushrooms, and onions.

""
Grilled drumsticks from Butcher Box (I pat dry and season with salt and pepper), a fresh tomato salad with olive oil, balsamic vinegar, fresh basil, salt and pepper, and a simple homemade slaw.

""
A CAVA bowl lunch. If I can choose lunch spot, I’ll choose CAVA 99% of the time. Power greens base, chicken and roasted veggies, black lentils, lots of toppings, tzatziki, harissa, and crazy feta. Reminds me to make homemade CAVA bowls soon!

""
Lemon dill salmon (I make this all the time because it’s so easy and everyone likes it) over a simple salad with rice from the rice cooker made with bone broth.

""
Leftover salmon over greens from the countertop garden with tomatoes and goat cheese and Garlic Expressions.

""
Kid’s Eat Free at Moe’s on Sundays and coming back into town, we fed the family for $20 which felt like a huge win. I got the bowl with chicken, veggies, lettuce, sour cream, pico, and jalapenos.

""
Dinner at mom’s house including homemade squash casserole, lemon dill salmon, boiled corn, and roasted green beans.

""
I cooked up some fajita steak and mixed it with sautéed onions, mushrooms, and rice with Mexican seasonings and we ate it like a giant dip. Delicious! Not pretty.

""
Fried eggs over cauliflower rice, onions, tomatoes, and herbs with berries.

""
One pot garlic butter shrimp with orzo

""
Dave’s Killer Bread (cinnamon raisin) dipped in an egg, milk, vanilla extract, and cinnamon mix and pan fried.

""
Assembly line Cobb salads! Mine had romaine, cucumber, tomato, orange bell pepper, boiled egg, red onion, chicken (using the precooked Butcher Box chicken which is great), fresh herbs, and Garlic Expressions.

And that’s it! What’s the best meal you’ve had recently?
