Wow. Just wow. I am so overwhelmed by your support for the book! It was such a labor of love. I consider myself a blogger rather than a real writer, so I really had to work hard to make it what I wanted it to be. Up until yesterday I was full of nerves- will you like it? Will it be useful?
It all culminated with my pushing publish on the post, followed by the big metaphorical exhale. It’s out there.
Then your love and support, and the sharing of it through family and friends, really overwhelmed me. I was on the brink of an ugly cry several times yesterday. I genuinely hope you find it useful, as that is it’s main intent. And if you have any questions, you know where to find me (winky face).
I decided to take myself and the girls out to breakfast to celebrate the launch (I’m self-congratulatory like that).
It took about 5 minutes into being there to realize… going out with two young kids solo is no celebration. It’s work.
But mannn was that cappuccino on point.
Yesterday also included a trip to the vet for my Koda bug. She’s not subtle about her disdain for the place.
There is no confirmed reason for us to worry, but we are waiting for some test results, so if you happen to have a spare positive thought or prayer, I’d be grateful if you sent it her way. She drives me crazy some days but I really, really love that pup.
By noon, I was emotionally exhausted and decided to indulge in a little R&R in the form of a hot drink and Delos videos.
The downtime served me well and I mustered the energy to hit up Target
and throw together a delicious dinner.
Oh yeah, what was the title of this post again?
I’m not sure if it constitutes a recipe, but these buffalo chicken soft taco wrap things (great title, I know) were absolutely delicious.
I baked 3 chicken breasts drizzled with olive oil, salt, pepper and garlic powder at 350 degrees for 40 minutes, until cooked through. I cut it up and tossed it with buffalo sauce before layering it onto a tortilla with romaine, carrots, celery, diced red onion, crumbled blue cheese, avocado, cilantro and ranch dressing.
Highly recommended!
