Grilled Halibut that a friend brought back for us from their Alaskan fishing trip! With roasted potatoes and Swiss chard (deribbed, stems chopped and sautéed in olive oil and garlic, then added the chopped leaves with salt, pepper and lemon juice).
BBQ Chicken Pizza – fun switch up from our usual!
Spaghetti Squash with a Meat & Veggie sauce and Salad.
Coconut Flour Crusted Chicken Fingers, Grilled Corn and Broccoli.
Chicken & Veggie Kabobs with Green Beans.
Chicken Fajita Salad.

Your coconut flour crusted chicken looks awesome! What recipe did you use? My favorite go to lunches are avocado and egg wraps, homemade soup with a side of bread and fruit, sandwiches with tempeh, arugula, and jam, Greek yogurt tuna salad with crackers and fresh vegetables or veggie burger salads! Hope this gives you some new ideas!!

I’ve tried to find the recipe I used but I unpinned it because I actually wasn’t too impressed. It was a baked recipe and I felt like the coconut flour stayed powdery, not crispy and the coconut flakes did not stick very well. I want to try out a few others because I loved the idea of it!

Lunch: Sherry’s famous chicken noodle soup with lots of broccoli. It keeps me healthy. I enjoy it two times a week and have never missed a day of work.

Yum! Such colorful, healthy meals! Hmmm, lunch. We’ve been doing salads with mashed avocado and salmon, or omelets, or wraps with eggs or leftover beans/rice (I like the sprouted grain wraps), or really any leftovers thrown over greens. Thanks for linking up!

I usually do salad or wrap for lunch. My mother in law made some baked eggplant with brushcetta on top which was delicious. She also made a stirfry veggie wrap with chicken which was awesome. Pizza on a bagel thin is also simple.

I’ve been loving sweet potato nachos. I cook up some sweet potato “chips”, layer with black beans, some cheddar cheese, plain Greek yogurt, salsa, and a little bit of Cumin powder. It’s really good! I also make Mexican salads, which is basically the same thing except lettuce instead of sweet potato chips. Some days, it’s a sandwich!

Your meals always look delish! My go-to lunches lately have been wraps using the Flat-Out wrap brand. I like tuna salad (made with mustard and cottage cheese) with some egg whites and grape tomatoes. I also made one with hummus, chicken, sliced peppers and cucumbers recently. Or I’ll make a chicken quesadilla using a sliced up cheese stick and some Franks sauce.

Lunch idea – panini! I have a Cuisenart griddler and it makes great paninis. Another idea is pita pizzas.

My favorite lunch right now is a quinoa salad with roasted zucchini, almonds, crumbled goat cheese, and a lemon-olive oil vinaigrette. So, so good. I roast the zucchini and make the quinoa and vinaigrette ahead of time so it’s easy to assemble when I want it.

Yum! Fresh Alaskan Halibut! Sounds amazing! My son and I have been enjoying tuna salad lately made with avocado, then rolled into nori sheets for tuna salad sushi rolls!

I love how perfect that basil leaf is on your spaghetti squash! Yummy fresh fish…a friend is giving me some fresh catfish later this week from her quick weekend fishing trip. My lunches are so random and all over the place. Typically it is something thrown together at the last minute.

Favourite lunch because I’m sick of salads at the moment is a stirfry, choose a protein (lamb, chicken, beef) throw in water ever veggies you have (I’m loving mushrooms, kale, broccolini, frozen corn, frozen peas, red pepper) 1 tablespoon soy sauce, 1 tablespoon fish sauce, chilli flakes and a garlic clove and ginger. lots of veggies but not a salad and hot.

I am a big fan of breakfast for lunch so not sure I’ll be a ton of help. I usually go egg scramble with a ton of veggies in a brown rice tortilla!

I’m a huge fan of your whole wheat pizza dough… I made ham and cheese pinwheels with a half batch of the dough tonight. I put chunks of ham in the NutriBullet… Worked like a charm! Dipping sauce was whole tomatoes, fresh basil & garlic… Also NutriBulleted before hitting the stove top 🙂 Turned out super yummy, would be great for little hands to eat!
