You’re going to love this cilantro lime rice in the rice cooker! But you don’t have to use the rice cooker. However, it is one of my favorite cooler weather cooking gadgets. I like this rice cooker because of the ceramic bowl which makes it nontoxic and still easy to clean. Most other models have a nonstick interior, which is great until it starts flaking off into the food (based on experience here)- yikes! Plus it has an automatic “keep warm” setting, so once it’s done, it will stay ready for you until it’s time to eat.

But back to the cilantro lime. It makes such a great base for burrito bowls, an excellent side dish for enchiladas, or just a tasty bowl to pair with black beans and some diced avocado.

The ingredients for this cilantro lime rice are simple and nutritious:

That’s it! Simple rinse your rise, add it to the rice cooker with the broth, butter, and salt. Or cook it as you would on the stove. Once cooked, add the lime and cilantro, fluff well, and serve hot.
