This past weekend, while Hubbs & K-dizzle went hunting, I got the chance to go hang out with my parents. I’m very close with my fam and don’t get to hang out nearly as often as I used to, so I get very excited when a weekend arises that we can be together.
I drove down to Greensboro, GA on Friday, and Saturday morning, we got up to head to the most magical place on earth…

I even got to meet up with one of my best friends, Alexis, for the game!
For those true fans out there, you already know we whipped Idaho State. Who? Exactly. Don’t hate. We need every ‘W’ we can get this season 🙂
Anywayssssssssssssssss…..
my main focus of this post is (supposed to be) the delicious soup mom & I made on Sunday using this guy:
Butternut squash soup has been on my ‘must-try’ list for a while now, and great minds must think alike, because mom had planned on making some!
Easy and healthy, right? Perfect. Know what’s cute?..
she takes note when my dad likes a recipe ;).
She went to work chopping leeks, shredding carrots and cubing squash…
while I was busy taking freshly dried oregano off the stems (not for the soup…just to have)
I also discovered where I get my goofy humor from…
Silly momma!
Finally it was time to puree! Learn a lesson from my mom and don’t puree the soup with the middle part of the blender’s top removed. Otherwise your backsplash will end up drinking half the soup, like mom’s did 🙂
Lesson learned.
After pureeing the rest of the soup (with the FULL top on), it was time for lunch!
The verdict? Delish!! A must-have for fall. It warmed up our insides and tasted great.

First of all, I had to laugh at the Idaho comment. This girl is from Idaho, but I won’t claim ISU at all. I’m a Boise State Bronco girl through and through (you know the blue turf?!) Yeah. Sounds like you had a fun time at the game though!

Soup looks great! The recipe looks pretty similar to the one I made a week ago. I will say though, I’m starting to get a little squashed out. An entire pot of of squash soup for one person starts to make me feel like my skin is going to turn orange or something! 😉
Yay for the Bulldogs! I’m not a Football fan, really, but my mom’s whole side of the family is from Georgia, and I hear my grandfather was a pretty big fan. He died before I was born, but I used to wear the little Georgia Bulldogs hoodie he had bought my elder sister before he died. Made me feel connected to my roots!

Looks like great fun spending time with your family! Fav soups are crab and corn bisque (but not so healthy with the thick cream base 🙁 ), chicken tortilla soup–not that they are fall flavors, but they feel warm and cozy on the inside.
