Loved all the congrats on my 5k recap! I’m still feeling proud and trying to figure out what to do next… another 5k? A 10k? Give up running? 😉 Just seeing if you’re paying attention.
And I have to send a big ol CONGRATS out to my friend, Patrick, for guessing our Halloween costume correctly… we were Hawaiian Punch!!
Sunday I picked up some locally grown okra when I realized how long it’s been since I had it. I love okra. I know some people complain about the slimy texture, but I embrace it.
PS- I realize that anyone that has never tried okra, now will probably never try it because I just called it slimy… but give it a chance!
Check out okra’s facts… for 1 cup, sliced and cooked, it has
40 calories
0 g fat
8 g carbs
2 g protein
4 g of fiber
It also provides 140 mcg of folate, (women in their childbearing years are supposed to get 400-600 mcg/day). Impressive, no? Plus it’s a delicious vegetable!
It’s incredibly easy to make… especially in my favorite recipe, appropriately called, okra and tomatoes!
First, chop up some okra. (Like that measurement? 😉 some. However much you want.
Put it in a pot… chop up some onion. Put that in the pot, too.
Then, take a can of diced tomatoes. I use organic because organic tomatoes contain more lycopene than conventional… and I love my husband and want him to have a healthy prostate. That’s love. 🙂
Oh yeah, put those in the pot, too.
Stir it all up and cook over medium heat for some time. I think mine cooked for about 45-50 minutes.

Serve it up with some chicken a la venezia, bought from Fresh Market because I didn’t feel like cooking, and some mac ‘n cheese! PS- still processed powder cheese, and still flavorless. I’m not a big fan of mac ‘n cheese. I gave it a try… and I won’t be buying it again. Sorry Hubbs.
Okra… it’s SO good!!
Then I finished dinner up with some dessert health food. Leftover Halloween candy… mmm!
Okra, Hubbs, dark chocolate, a hot tub dip, a fire and my puppy dog. A fabulous, chilly evening!!

I have loved okra since I was a kid. Recently we started putting on the grill, like a kabob.

I’ve only tried okra a few times and loved it! The slimy texture doesn’t bother me either…I think when you’re expecting it, it’s quite tasty! 🙂
