I know oats rule the healthy living breakfast world, but I’ve tried them, and though I like them (piping hot and usually in winter time), I’m more of an eggs kind of gal.
I know people usually skip eggs on weekdays because of busy mornings, but I can show you how to make a delicious and filling omelet in less than 10 minutes. Ready?
Grab your ingredients!
Greek-Inspired Weekday Omelets
Time saver: do your Sunday prep work and have diced onions and tomatoes already on hand.
- 2 eggs
- diced onions
- chopped baby spinach
- diced tomato
- feta
- a stick of butter
Have a small, nonstick pan available for omelets. Set it over medium to medium-high heat and rub the stick of butter on it quickly to barely coat it.
Toss in your onions and let them start sizzling, while you crack your eggs into a bowl and whip together (or use 1 egg and 1 egg white like I do).
Once your eggs are prepped, your onions should be nice and browned.
Turn the heat to medium-low and throw in your diced tomatoes and spinach.
In less than 30 seconds, they will look like this:
Pour in your eggs.
Time saver: find a lid that covers your pan and cover. This way your eggs will set in less than 2 minutes.
Once your eggs are set, sprinkle on some feta cheese and fold over. If you’re feeling fancy, also add some fresh chopped herbs, salt and pepper, bacon crumbles, salsa or anything else that strikes your fancy. That’s what omelets are for!
Plate it up and devour!
And there you have it- delicious, protein-rich breakfast in under 10 minutes!

Brittany that omelet looks so good! Normally I just make over easy eggs and toast — and we eat that 1-2 mornings during the week. Eggs aren’t any harder (for me) than making oatmeal or a big smoothie.
