Eggs. If you\u2019ve been reading here for more than a minute you know I eat a lot of them. Right up there with Bubba Gump and his shrimp, I like \u2018em scrambled, poached, boiled, basted<\/a>, fried, smothered in hollandaise\u2026 the list goes on. I feel incredibly fortunate to have friends that have chickens and provide me with awesome eggs on a regular basis. These eggs come from \u2018happy\u2019 chickens (as David calls them) where they are free to roam and enjoy their lives. However, since we eat a decent number of eggs, I sometimes fly through their generous donations and need to pick some up at the store.<\/p>\n

…But have you seen the options at the store? It\u2019s completely overwhelming and hard to distinguish which labels mean something and which are just fluff (I\u2019m looking at you \u2018natural\u2019). Here is a great info graph I found to help navigate the meanings (click to enlarge).<\/p>\n

I\u2019ve spent a decent amount of time in front of the cooler section staring at egg options, so when I was offered a chance to try out Pete and Gerry\u2019s Organic Eggs<\/a>, I jumped at the opportunity to learn more about what the labels mean and taste this new-to-me brand.<\/p>\n

It didn\u2019t take long after I visited their website to get a solid feel for this awesome company. Eggs are one food I\u2019ve found you can really taste a difference between conventional and quality. So when I\u2019m buying eggs at the store, while I do care about labels, the one thing I\u2019m most concerned about is TASTE. Pete and Gerry\u2019s eggs taste like you picked them up at your local farmers market. To test them out, I decided to try my hand at a fancy breakfast I\u2019ve been thinking about lately and cook an egg inside<\/em> an avocado.<\/p>\n

For as fancy as I thought it looked, it was quite simple to make.<\/p>\n

Just remove the pit then slice off a little on the bottom of each half to create a flat resting spot. Carefully crack the egg into the center of the avocado.<\/p>\n

Bake at 425 degrees for about 15-20 minutes then devour! This dish would be great item for a brunch or having guests over because you could make a whole bunch of them at once, they look impressive and they fill you up!<\/p>\n

The egg really shines in the dish with its creamy yolk and it kept me full for hours.<\/p>\n
