Yesterday I broke every rule I’ve ever learned being a mom. I took Hailey to an over-packed grocery store way too close to nap time.
Somehow between the flurry of people at The Fresh Market and a few ‘samples’ from the bins, we survived! Our fridge is stocked for Christmas Eve and Christmas!
Plus, thanks to The Fresh Market’s sale (any 3 berries for $10) and the awesome coupons Driscoll’s sent me as part of their #3pmsnack campaign, the fruit for today’s Christmas Eve breakfast celebration with friends was almost free! Little victories, my friends, little victories.
The day was full, but I got so much accomplished. I gave out the last of my gifts.
Homemade gift basket featuring David’s homemade wine, home pickles, homemade vanilla extract, kid’s Santa cups, chocolate almonds and a mini Bath & Body Works Candle (I’m obsessed).
I made THREE loaves of bread in our new machine in preparation for today.
And while the machine did the work, I got to play with Brussels sprouts!
I always roast my sprouts. They are delicious that way, but I’ve been intrigued by this shaving trend. It’s pretty simple, really. You just need a food processor and it takes care of itself in under a minute.
The secret is you need a really good vinaigrette to helps break down the shaved sprouts and turn them into a delicious salad.
The easiest way to accomplish this that I’ve found is to put all your vinaigrette ingredients in a mason jar and shake the fool out of it! Then, let the sprouts, radicchio and apple marinate in the dressing for an hour before serving in a large bowl topped by the rest of the goodies.
The contrast between the sharp vinaigrette, sweet apples and crunchy, creamy cashews makes for quite a flavor fiesta.
So make it for Christmas, or wait until New Year’s when you’re ready to kick things off on a healthy note.

It’s funny I used to hate brussel sprouts until this year when I tried them roasted. Then I tried them shaved and loved them, too. I grew up being served steamed or boiled brussel sprouts so I never knew how good they could be!
