Fact: the last time I watched the Super Bowl was three years ago. Even then, it was more so a gathering of friends rather than a watching of the game. I’d claim it’s because I’m more of a college football girl (Go Dawgs and all that jazz), but honestly I think it’s mostly because it starts so late on a Sunday. 6:30 is late? Why yes, yes it is.
And I’ll be honest, if it wasn’t for deflate-gate and this Dove commercial (<—warning, tearjerker), I might not have even remembered the game was coming up this Sunday.
I have high hopes of getting in a solid first-half watching just as an excuse to make some delicious snacky type foods that the event is known for. Dips, spreads and finger foods are my favorite and though I considered making wings, I decided to switch it up a little in favor of a baked chicken popper treat that would still satisfy my desire to dunk something spicy in blue cheese.
The coating on these nuggets is thick and first draws the taste buds in with a hint of sweet brown sugar before BAM, hitting you with the spice of cayenne. If my mastery of flowery language (haha) hasn’t convinced you, how about the fact that these take less than 30 minutes to make?
They are simple and fail-proof, so if you want to bring a healthier option to a party (or just your own dinner table- I’m not one to judge) and escape the eye rolls associated with being “the veggie plate girl” (again, I’ve been there many a time), try these baked chicken bites.
Just don’t forget the blue cheese. The cool, creamy dip really partners well with the heat of the chicken for a killer combination that is sure to please all spice-loving palates, even of the furry variety.
And the extras (if you have any) are pretty great to throw in a wrap and call it lunch too. Mmm…

Description
These sweet and spicy baked chicken bites are the perfect crowd-pleasing party snack when you ant to bring a healthier option that isn’t another veggie plate!
Ingredients
- 2 lbs Chicken Tenders
- 2 Tbsp Olive Oil
Spice Blend
- 1/2 c Dark Brown Sugar
- 1 Tbsp Chili Powder
- 1 Tbsp Smoked Paprika
- 1 Tbsp Dry Mustard
- 1 Tbsp Garlic Powder
- 1 Tbsp Kosher Salt
- 1 Tbsp Ground Black Pepper
- 1 tsp Cayenne Pepper
For Serving
- Blue cheese dressing
- Celery
- Carrots
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, mix all the spices until well combined.
- Cut chicken tenders into 1 inch, bite-sized pieces.
- In a large bowl, drizzle chicken pieces with olive oil and toss to coat. Add spice blend and toss until each bite is covered.
- Place bites on a rimmed baking sheet and bake for 20 minutes, or until internal temperature reaches 165.
- Serve warm with blue cheese dressing.
