I feel like I need to start with some commentary on the Super Bowl, but honestly\u2026 I don\u2019t have much. I\u2019m a college football girl for life and though I did enjoy seeing Missy Elliot do her thang and take me back to my college days, keeping Kaitlyn up past her bed time proved to backfire. At least the friends and food was fun!<\/p>\n
I contributed this Layered Hummus Dip<\/strong> to the party.<\/p>\n <\/a><\/p>\n I love it because it comes together so quickly and no recipe is needed. Simply layer<\/p>\n – 1 large container or hummus (I like plain since the toppings add so much flavor!) Of course, there are endless flavor combinations, and it always adds a nice pop of color to the spread.<\/p>\n <\/a><\/p>\n Speaking of food, I\u2019ve really been enjoying it lately.<\/p>\n Instead of going out Saturday night, we opted for a family shopping trip to Whole Foods (walk in beer fridge included- Hailey just thinks how cold it is in there is hilarious)<\/p>\n <\/a><\/p>\n and making dinner at home.<\/p>\n <\/a><\/p>\n It\u2019s something we are going to try and do more often. Even buying fancy, prepped items (like pre-made burgers) at Whole Foods ends up being much less expensive then dinner out for all of us.<\/p>\n Breakfast at home is proving to be easier then going out lately too.<\/p>\n <\/a><\/p>\n This egg scramble with tomatoes, onions, goat cheese and crumbled bacon was delicious.<\/p>\n I\u2019ve also rediscovered the joy of zoodles (zucchini noodles for those that aren\u2019t into cutesy names. Cough, David, <\/em>cough).<\/p>\n <\/a><\/p>\n Certainly you\u2019ve seen spriralizing everywhere. When it first got big, I bought a spiralizer, but then mostly forgot about it until my friend Danielle mentioned it to me last week. Now I can\u2019t get enough!<\/p>\n <\/a><\/p>\n I saut\u00e9 them in olive oil with tomatoes and onions, then add a sprinkle of garlic powder, kosher salt and red pepper flakes. Sometimes shrimp too. Delicious!<\/p>\n Hm, let\u2019s see what else.<\/p>\n Boiled eggs on salad.<\/p>\n <\/a><\/p>\n And homemade laraballs<\/a> are back to being a staple too.<\/p>\n <\/a><\/p>\n This time I processed the ingredients a little finer than usual and added raisins.<\/p>\n

\n– finely diced red bell pepper
\n– finely diced red onion
\n– sliced kalamata olives
\n– crumbled feta
\n– sprinkle with chopped cilantro or parsley<\/p>\n
