That’s what sleepless nights are made of. It wasn’t really a sleepless night, but considering we didn’t get to bed until nearly midnight (all you college kids, laugh away. You’ll get old one day, too :P), morning came early! Hubbs didn’t get home until 11:30 last night, so of course I waited up. I read almost all of ‘The Help’ and also ate 3 olives that aren’t pictured on yesterday’s food blog. Once I fell asleep around 12:15am or so, I was out cold. So when the little nugget started her whining around 5:30am, I was in no mood to deal with it. But then the summer sun was shining in and not helping the situation. I spent the next 2 hours tossing and turning, until I finally got up around 7:00ish and kicked ::ahem:: fed the dog. (I’d never actually hurt my sweet pup!)
Then came my breakfast. I decided to try out eggs again. I split 2 whole eggs and 3 egg whites with Hubbs. Wrapped mine up in a wheat tortilla with spinach and low fat mozzarella.
It tasted fine, but I am so confused how only a month or two back I ate eggs everyday. I loved them! Now they just don’t settle right with my stomach. Huh?? What happened?
I’m also happy to report that I can walk today. Although I can feel a little bit of Jillian in my upper back and arms, nothing is painful and my legs are fine. On second thought, I’m not sure I’m happy about that. I kind of like that pain that is associated with ‘I DID Something’. Maybe I’ll move on to level 2 today? We’ll see…
Obviously eggs aren’t doing it for me anymore… What’s your favorite summertime breakfast?

Before I get back to food, I must first issue a formal apology to Jillian. I’m sorry Jillian. I said I was only slightly able to feel your workout from yesterday… I lied. When I came back today to do my second day of workout #1, my legs were shaking and my arms… weak. Thank you for kicking my booty back into strength training! Shaking muscles means that my muscles were fatigued- yay! I think I’m going to like the video for a quick strength training session, but although it has cardio built in, I probably need more than it gives me.
After working out with J, I showered and realized I was running late- eeks! So I grabbed a snack for the road…

Then, remembering that I bought some kale at the Teeter, I decided to finally try out KERF’s Kale Chips.
Kale, drizzled with about 1/2 tbsp of olive oil, 1 tbsp of grated Parmesan cheese, and sprinkled with salt. Before the oven:

I can hear some of my friends now “eww-ing” at these and thinking I’ve lost my mind, but I’m all up for trying new things! At first taste, I was psyched! Crispy and salty (two of my favorite tastes!)… but then came a little bit of a bitter aftertaste. eh. I still ended up eating almost all of them, and I do think they are pretty good! However, 5-8 kale chips would suit me well… no need to eat a whole plate. Have you tried kale chips? Would you try kale chips? What was your impression?

For dinner I was excited to attempt to make my own salsa! I am trying to learn more recipes and be more adventurous in the kitchen. I’m learning that this doesn’t come naturally to me. I am a bit more of a recipe-follower… but I’m trying! I figured salsa would be hard to mess up, so I went ahead and chopped things up…
recipe-less.
Two colors of tomatoes, garlic, jalapeno, onion, fresh cilantro, lemon juice. Everything went into the food processor. Confession: I’ve never used a food processor. Unless you count my mom letting me help put stuff in it growing up. I had no idea what I was doing. I envisioned a nice, chopped up blend of ingredients, but it turned out as more of a summery puree.
Hubbs’ reaction? “Why did you make baby food?” Arghhhhh. Despite the ‘baby food’ appearance, it tastes pretty yummy- very fresh!! So I consider it a success 😀
Hubbs’ punishment? Holding my plate in good light so I could get a picture of the whole meal.

Mexican night! Iceburg lettuce (yes, I know… no nutritional value, but I like the crunch!), black beans, green peppers, onions, shrimp, avocado, fat free sour cream, and some of my special salsa! Lots of flavor- delish!
I also munched on 2 handfuls of Tostitos scoops while “sampling” the salsa. I forgot to take pictures, but figured I ought to fess up.

that’s so funny that you ask what my favorite summer time breakfast is…..as hot as it is, i’m eating oatmeal right now. so weird. i’d much rather have a greek yogurt & fruit but this is what i grabbed! 🙂

I used to eat eggs almost every day and now that I’m pregnant, I can’t stand the sight or smell. BUT, I’ve heard they’re really good for the growing baby so I’m going to start trying them out again soon.
My favorite summertime breakfast used to be yogurt and fruit – well now that I have all these funky food aversions, I’ve been eating either 2 plain eggo waffles or a bowl of cheesy grits. That’s pretty much the only 2 things I want. But I really need to try out eggs. Maybe if I make them into an egg wrap and put lots of cheese in it, that’ll help… hmmm, I’ll have to try it out soon. Don’t you love how my comments turn into me talking to myself?? haha! 😉

my favorite summer breakfast used to be cereal but now I’m really into a big bowl of fresh fruit, greek yogurt and a piece of toast. or an egg, tomato, hummus, and sprouts bagel sandwich from brueggers – so yum. or a veggie filled omelet. can you tell that I love breakfast? lol
as for the kale chips, I see them frequently on KERF’s blog and caitlin’s (from Healthy Tipping Point) but I’m a tad hesitant to try them. I’m not a big kale fan as it is and eating them crispy just doesn’t sound appetizing to me.

I’m a recipe follower the first time I make something and then as I become familiar with it, I make changes to the recipe!
I definitely stick with fresh fruit and yogurt for breakfast in the summer!

Mmm that salad looks so good! I’ve been trying your frozen berries, yogurt & cereal breakfasts lately and I’m really enjoying it!
And I’m more of a recipe kinda gal but every now and then I fly by the seat of my pants and it usually works out okay. 🙂

I am always at a loss as to what I should eat for breakfast in the summer. Oatmeal is my go to breakfast for 9 months out of the year but it’s just not appealing in the summer time. I think my favorite summer breakfast would be yogurt, fresh fruit and musli.
