Wow, I’m getting a late start on blogging this morning! Hubbs got his new Droid last night (don’t tell… I think I like my iPhone better ;)). Anyways, we stayed up playing with phones later than we should, so it’s definitely a coffee morning. Since coffee came before I was very awake, I forgot to take a picture. Oops. But you know what it looks like. In the same boring blue mug. I really need to find some cute, fun coffee mugs before fall hits.
Breakfast, however, I did take pictures of, and it was yummy! This morning I toasted the Fold It FlatBread, which made a world of difference. Once toasted, I topped it with a thin layer of cheese and 1/2 a piece of bacon (natural, of course).
I’ve found that a 1/2 piece of crumbled bacon is all your need to turn ordinary into extraordinary!
Topped with 2 egg whites scrambled with peppers, onions and spinach… & some TP. (Ew, I just realized I CAN NOT use TP for an abbreviation for Texas Pete… did you just picture me layering Charmin Ultra on top of my breakfast sandwich- YUCK).
Like I said, toasting the flatbread made a world of difference… YUM.
And this peach of a guy (lame… not witty yet… c’mon, coffee!!!) was involved in breakfast, too…
OK, I’m way behind this morning, so I’m off to read blogs, um… I mean… work. 😉 … and listen to Wake Up 101 on Cosmo Radio with Kenny… because Tay is on her honeymoon. Does anyone out there know what I’m talking about?!
I kinda wish fall was here… as much as I love boating weather, I’m longing for soups, college football, fires (in the fireplace, of course), leaves changing colors in the mountains, the smell of cinnamon orange and cloves, hot tea on a cool porch, Oktoberfest in Germany… oh how I love fall.

Looks like I’m not alone is my adoration on fall <3! Is it because we are all so hot right now? In winter, will we say summer is our favorite season? Either way… c’mon fall, hurry up! 🙂
Lunch was pretty simple… I got sucked into work world and before I knew it, 2:00 had arrived without a bite of food since breakfast… so I threw this together really quickly:

Can you believe I wasn’t even really hungry for dinner? Who am I today?! Oh yeah… I’m that girl that has had her nose in an Excel document all day and hasn’t come up for air—much less exercised—and hasn’t had the chance to even work up an appetite… unless you count throwing a stick in the water for the Bug as “exercise”.
Luckily dinner was simple. I used Julie’s idea to use the slow cooker (yes, in the summer… crazy, right?). Well I stuck 3 chicken breasts in around noon, along with some chicken broth, and let them cook on low all day.
Then a few minutes ago, I pulled out the chicken, shredded it and mixed in some Sweet Baby Ray’s BBQ sauce. I intended for it to be a sandwich, but with my appetite no where in site, I decided to forgo the bun.
Ialso roasted some zuc, squah and onions. Easy Roasted Veggies are quickly becoming my favorite way to prepare veggies. It’s so easy! Choose any veggies you like, slice, toss (in 2 tsp of Garlic Gold), sprinkle with S&P, bake at 375 for about 30 minutes. DONE. & Delish.

Ah… sweet simplicity. I was going to take picture outside for better lighting, but the daily late-afternoon summer storm had already arrived…
Not sure if you can see the rain or not in that picture, but the rolling thunder is so peaceful. I guess there are a few nice things about summertime after all 😉

I’m with you on the fall weather. I love summer, and usually never want it to end, but this 100+ degree weather in NC this year is killing me. I love fall, but the only thing that sucks about fall is that winter comes after. I really don’t like winter at all 🙁

Your breakfast looks delicious! I’m super ready for fall too. Unfortunately, since leaving the Midwest for Phoenix, fall is fairly nonexistent. Even though the leaves don’t turn, I’m still cheering on the start of cooler weather and football season.

First off…GAH!!! You are a Dawgs fan?! Me too!!!! I love watching some good ole SEC football. I’ve been teaching M how to do the “Gooooo Dawgs! Sic ’em!” chant. LOL
Summer used to be my fave season, but now fall is. There are just so many fun things to do. And with a kiddo it is nice to actually go outside without worries of heat stroke.
