I’m stopping by on a busy Wednesday with an easy dinner option! I got such a positive response on my Ultimate List of Kid-Approved Crockpot Meals<\/a><\/span> post that I made a mental note to continue to share other easy recipes that I make and the family enjoys. I used to feel like a recipe had to be unique and fancy (ahem, vegan koftas with lemon-tahini sauce<\/a><\/span><\/em>) for me to share it here, but while those *are* delicious, I know a lot of you are like me and looking for simple, healthy dinners for weeknights that your kids will eat. <\/p>\n This easy sausage and pepper dinner takes 10 minute to prep, and 30-40 minute to bake, and only has one dish to clean up. That, my friends, is a win in my book. Plus, it’s easy to customize to taste preferences. I used spicy Italian sausage for David and me, and used sweet Italian sausage for the kids.
