Welcome to another Munchkin Meals!<\/p>\n

For those who requested it, here’s the link to my segment on FOX News Rising<\/a>. Everyone there was so sweet and wonderful and I had a such a fun time!…despite shaking like leaf. Seriously. Can you tell?<\/p>\n

Hailey is now 14 months old<\/span> and still an adventurous eater.  Fingers crossed she keeps it up! She\u2019s at the point now where I can notice a higher grocery bill with feeding her. I attribute this to string cheeses, more Greek yogurt, and more frozen vegetables to keep on hand. I don\u2019t mind in the least as long as she keeps eating it all!<\/p>\n

Look familiar? Yes, I forgot to snap a picture. This is my breakfast, but it\u2019s also pretty much Hailey\u2019s. She eats an egg scrambled with peppers and onion and a little salsa<\/strong> stirred in for extra flavor. She loves fruit with breakfast and always has a whole banana<\/strong> and lately, half a clementine<\/strong>, too. Sometimes she\u2019ll have a few pinches of the soft part of the bagel and always washes it all down with her milk.<\/p>\n

Lately leftovers have been our best friend for lunch! I\u2019ll use leftover roasted vegetables and brown rice<\/strong> to create a quick stir fry with olive oil. Other times, it\u2019s straight leftovers, like leftover roasted sweet potato, roasted Brussels sprouts and steak<\/strong>. Roasted vegetables are definitely her preferred method of preparation. I can\u2019t blame her; they\u2019re delicious!<\/p>\n

Hailey isn\u2019t much of a meat lover. She\u2019ll eat a few bites of chicken or steak before leaving it behind for more veggies. One exception is salmon<\/strong>. She\u2019ll put away some salmon!<\/p>\n

Snacks lately are string cheese<\/strong> or Greek yogurt<\/strong> and pomegranate arils<\/strong>. I love how easy these are to store and grab in a hurry, once you do the work of extracting them.<\/p>\n

Dinners vary, but I\u2019ve found a quick and healthy go-to, avocado pasta<\/strong>!<\/p>\n

1 ripe avocado, mashed in a bowl with salt, pepper, lemon juice and a little olive oil + whole wheat pasta (I prefer elbow- perfect size for little fingers) and viola! Dinner. Hailey approved.<\/p>\n
