Hey all! Still beaching it up, and as you can tell from yesterday, I\u2019m not eating quite like I normally do. Luckily, I\u2019m able to keep Hailey (10 months old<\/strong>) somewhat on normal eating, without having to spend a lot of time in the kitchen. After all, who wants to be in the kitchen when there is an island to explore?!<\/p>\n

Dinner last night was ready in about 2 minutes. While I warmed up the brown and wild rice, I drained and rinsed the beans. Then, sliced the avocado and VIOLA- dinn-ah!<\/p>\n

Ok, I threw in a slice of red bell pepper, too because it was around. It doesn\u2019t get much easier and quicker than this.<\/p>\n

Now I need to just follow Hailey\u2019s lead and stay healthy on vacation!
