Another week, another edition of healthy kids\u2019 eats! This week I’m focusing on breakfast<\/span>. Hailey (9 months old)<\/strong> was introduced to solids via baby led weaning<\/a> and enjoys a wide range of breakfast food from yogurt to waffles, but since I enjoy eggs so much, she often ends up eating them, too.<\/p>\n <\/a><\/p>\n She\u2019s funny with eggs in that I can\u2019t give them to her when they\u2019re too hot, but if I wait until they are cold, she won\u2019t eat them. So egg breakfasts require pinpoint accuracy in timing.<\/p>\n Also, like her mama, she prefers some goodies in her eggs. That\u2019s how I came to create the<\/p>\n <\/a><\/p>\n First I small dice onions, peppers (this one happened to be purple<\/span>!) and spinach. I add some butter to a hot pan and saut\u00e9 the peppers and onion over medium high heat.<\/p>\n <\/a><\/p>\n Once soft, I turn the heat down to medium low and add the spinach.<\/p>\n <\/a><\/p>\n I add in one scrambled egg and a teaspoon of nutritional yeast!<\/p>\n <\/a><\/p>\n Nutritional yeast<\/strong><\/a> is a wonderful vegetarian source of B-12, folic acid and many other nutrients and amino acids. I sprinkle it on broccoli, popcorn, mac and cheese and it’s great with eggs.<\/p>\n <\/a><\/p>\n As the egg cooked, I flipped it like a pancake and folded it onto itself to create the baby power omelet!<\/p>\n <\/a><\/p>\n Garnished with parsley (which Hailey also ate) and cut up grapes on the side.
