After unloading all those heavier thoughts out of my mind yesterday and reading all your awesome comments, I’m ready for something a little lighter today, so…. FOOD?!
It’s been a while since I’ve done a straight up WIAW post and actually enjoyed snapping some food pictures yesterday…
I started the morning by splitting a smoothie with Hailey. I always have to wait until the girls are up because the Blendtec sounds like a rocket and Hailey insists on pushing the button. Since the workers (for our bathroom project) arrived early, the house was already loud and full of chaos when my sitter arrived and I felt a little bad taking off for the peace and quiet of Sun Up Cafe.
Ok, not that bad.
I had a western omelet and fruit before I met up with Julie for a pedicure date. I had the best time just chatting it up and made a mental note that I need more friend dates on the regular.
I grabbed the girls and headed out for a few errands, including snagging an unsweet tea to wash down my favorite Larabar.
We were back home by 1ish and I patted myself on the back for Sunday’s food prep because…
I can’t tell you how happy jar salads made me.
I downed one and attempted nap time for the girls, which never really happened. I guess plumbing work, music and barking dogs make it hard to sleep, but on the upside, our Moen parts showed up!!!
I whine about the chaos, but really our contractor is keeping things moving along at a brisk pace, which I really appreciate.
I found myself hungry again around 3:30 and snagged another jar salad. They’re just so tempting sitting there in the fridge like that, all prepped and ready to go.
Mixed greens, carrots, cucumbers, artichoke hearts, tomatoes, quinoa, cashews, feta and balsamic dressing.

I knocked out a bootcamp class in the afternoon and got talked into doing hill sprints afterwards by a friend that I’m not sure I should thank or curse at… I kid, I kid.
Back home I packed Hailey’s lunch as she snagged bites out of it along the way. Typical.
Once the girls were down, David and I dug into the BBQ pork that had made the house smell heavenly all day.
Paired with dill pickle sauerkraut that I just can’t seem to get enough of.
And that about wraps it up!
For my own curiosity and future reference, what is your favorite ‘set it and forget it/cook all day’ crockpot recipe?

I have a crockpot lasagna recipe that is my go-to when we’re having people over for dinner but I don’t have time to come home and cook! 🙂

salads in a jar are my jam, too. Food prep is such a lifesaver- especially with busy days or little ones. My go to crockpot recipies are chili, Moroccan chicken, pulled pork and salsa chicken.

Life looks busy with the home renovation going on. I love that you have a sitter that comes for a few hours a week I’m in the process of finding a mothers’ helper / babysitter, too, and can’t wait to hire someone.
My go to crockpot recipe is a white chicken chili. I love to make this alot in the winter and for days when we do a playdate/easy supper with friends.

I just used my crockpot for the second time ever (in about 3 years) to make miso split pea soup from Neverhome maker. It was amazing!

I just made a spicy 2 bean chili in the crockpot yesterday. It was so good! I need to experiment with the crockpot a bit more – I tend to stick with safe meals like soups and chilis. Time to branch out!

My easiest crockpot recipe is chicken breasts (number depending on how much meat you want…3-4) with Herdez salsa verde poured over it. Set it and forget it! Then shred the chicken with a fork. You can use it in tortillas, on salad, in rice bowls, on quesadillas, etc. SO GOOD!

Dill pickle sauerkraut? That sounds amazing and that dinner looks amazing! My go to crock pot meal has been Lindsay Cotter’s BBQ Lentil Stew. I’ve made it like 6 times. 🙂

I love the idea of salad in a jar, but it doesn’t seem like I could fit enough salad ingredients to make a filling salad into a mason jar. What size jars are you using?

I use quart size and if it’s just veggies, you’re right- it won’t keep you full for long, but if you load it up with some heartier foods (nuts, seeds, protein, olives), it is pretty filling! 🙂
