A delicious combo of avocado, a Roma tomato, 1 egg & 1 egg white on a slice of Arnold whole wheat toast. A cup of decaf with 1 Tbsp Breve Cream was also consumed… just not pictured.

Delicious, sweet, summer watermelon.
Organic romaine topped with a Morningstar Farms Spicy Black Bean burger, some avocado, green peppers, onion and salsa.
Loving the garlic variety lately with about 7 Kashi Seven Grain Crackers.

Simple and yummy. I cut up organic broccoli, onions and organic red pepper and stirfried it with teriyaki sauce, served on a bed on quinoa.

1/2 c of organic lowfat regular yogurt (not Greek, can you believe it?!), topped with 1 Tbsp of dark chocolate chips. The perfect sweet ending to the day.

Why no sodium count? Because it wouldn’t be accurate. I didn’t measure precisely how much teriyaki sauce I used and we all know that’s FULL of sodium. Let me assure you, my total was probably over 2300mg. I plan to refocus on reducing sodium when I have more time (gotta love excuses ;)), and in the meantime I try to eat as many whole, unprocessed (and therefore low in sodium) foods as I can.

Watermelon is the perfect summer snack!! I forgot to pick it up at the store this weekend and was so angry at myself. haha!

I’m with you on loving avocados — Jason and I eat at least 1 each day. I take 1/2 for my salad at lunch and he has the other half on a sandwich. I just love them!

It all looks delicious! I need to try the Kashi crackers. I’ve been VERY into avocado lately. More specifically, open-face tomato and avocado sandwiches on sprouted rye bread. Obsessed!

I’ve really been into watermelon lately – I pick one up every time I go to the grocery store. Strawberries are also super yummy this season, too.
While not I’m not a fan of fried eggs, I must say that yours always look so appetizing to me. I may have to give them a shot.

You haven’t seemed to have “upped” your eats much since you’ve starting eating for two (though I know it doesn’t take much to feed something that probably still weighs less than 5 lbs – haha). I say this because I’ve got a question for you – Do you think it’ll be hard to go back to eating for one in 8 weeks? I’ve always wondered about that, but I’m scared to ask most new mommies. Since you’re a healthy eater, I know you’ll understand won’t be offended. 🙂

It really depends on the day as to how much I eat, but typically it is between 1800-2100 calories. Before I was probably eating about 1600 a day, so you’re right, it isn’t a big difference!
Doctors say that you need about 300 calories more during the 2nd trimester and 500 more during the 3rd, but honestly, it’s easier for me to just eat when I’m hungry.
Now that I think of it, I’ll still kind of be eating for 2 in 8 weeks because I plan to breastfeed and you have to keep your calories up to produce enough milk, so that ought to be an adventure to figure out!
Part of my motivation for sticking to such healthy eats during pregnancy (besides giving my baby the best food to grow on) is because I didn’t want reality to slap me in the face when I tried to go back to healthy eating. Plus, I enjoy healthy food, so it’s actually been enjoyable (AFTER that pesky 1st trimester when I only wanted bagels!) 🙂

Great day of food! (omg…only 8 weeks until Baby D is due?? Holy smokes!) We’re eating a fair amout of hummus ourselves these days. We JUST found a pesto hummus that is low fat, and its amazing! And also local cherries. Have a great day Brittany and Baby D!
