I\u2019m excited to try a new way of sharing my weekly meals with you!<\/p>\n

But first, I can\u2019t NOT <\/em>talk about how amazing this weekend was. (Sorry for the double negative first thing on a Monday morning!).<\/p>\n

David was working out of town Friday night, so Hailey and I spent the afternoon strolling Birkdale Village, then grabbed dinner together at Bad Daddy\u2019s Burger Bar. It was a wonderful girls night (errr<\/em>\u2026 afternoon and early evening) out and I hope to squeeze in a few more dates before baby girl arrives!<\/p>\n

Saturday morning we headed out again, to breakfast and the Davidson farmers market. We snagged the last gorgeous rainbow chard before meeting up with my good friend, and her daughter at the playground. We played for a few before crossing the street and letting the girls chase squirrels and run wild on Davidson\u2019s beautiful campus.<\/p>\n

The weather was 65 and sunny so we spent the entire morning meandering and chatting.<\/p>\n

Sunday\u2019s weather was similar- 70 and sunny! With David finally home, we spent the entire day outside again. How could we not? We hung out at a local park in the morning, taking nature walks, running bases and throwing balls for Koda.<\/p>\n

And we squeezed out every last possible minute of daylight in the backyard, raking, swinging and planning which plants should go in the garden this year.<\/p>\n

What a tease for spring! I\u2019m really hoping it sticks around, though I keep reminding myself that is only February.<\/p>\n

Now, for the grub! Instead of sharing what\u2019s coming up this week, I am going to share last week\u2019s meals with a little visual aid. I\u2019m hoping these will be helpful for you if your in a meal rut, because I plan to revisit them when I need some inspiration myself. I\u2019m also going to try and do a better job of updating my weekly meal plans list<\/a>.<\/p>\n

Sunday<\/span>: Gyro Burgers<\/a> with Hummus and Feta served with Greek Salad<\/p>\n

Monday<\/span>: Chicken Tortilla Soup<\/a> with a Cheese Quesadilla<\/p>\n

Tuesday<\/span>– Turkey Burgers with Roasted Brussels Sprouts & Sweet Potato<\/p>\n

Wednesday<\/span>– Turkey Meatballs over Quinoa Pasta with Saut\u00e9ed Kale<\/p>\n

Thursday<\/span>– Sweet Potato Nachos<\/a> with Black Beans and all the Fixins<\/p>\n

Friday<\/span>– Bad Daddy\u2019s Buffalo Grilled Chicken with Tater Tots<\/p>\n

I didn\u2019t snap pictures of them all, but there was oatmeal with berries, a fried egg on homemade bread with avocado and clementines,<\/p>\n

and a breakfast burrito with veggie scrambled eggs, cheese and avocado.<\/p>\n

\"Lunches\"<\/a><\/p>\n

Again, not pictures of them all, but largely they are leftovers in the form of salads (salad green with leftover roasted veggies and blue cheese)<\/p>\n

and one day there was a Mexi stuffed baked potato- mmm.<\/p>\n
