Welcome to Munchkin Meals! You can find previous link ups here and please check out my post on baby led weaning over at Rachel Cooks today!

These past two weeks with Hailey’s (22 months) eating have been odd. I’m not sure if it was teething, her schedule being thrown off because of vacation or if it’s a new stage in her eating development, but meals have been more simple. Some as simple as yogurt and chia seeds with fruit.

Sometimes a wheat English muffin thrown in if we’re feeling wild.

Some of the simplicity I can blame on my laziness nutty schedule (that fortunately should be calming down soon).

I’ve tried to get fancy a few times…

"toddler

but with lackluster results. The only foods eaten in the above meal were the olives, the goat cheese and 1/2 a red pepper strip.

Hailey seems to have gotten wary of peels in the past week. She will scrape the flesh off a pepper stick then leave the skin; same with peaches. It’s an odd new behavior for her and I’m waiting to see if it sticks around or is just a phase.

I can always count on her eating three things, though. First, fish.

"toddler

Secondly, avocado. I love that she loves this one.

"toddler

Finally, cream cheese sandwiches. It’s a recently discovered favorite food. She gets really excited when she asks for ‘Cweem Teeze!’

Life should calm down by next week, and then I am looking forward to getting back on track with serving vegetables on a consistent basis to her, but until then, avocado, cream cheese and fish will do just fine.

Also, I have to share these cute snacks I’m talking about on Thursday on WCCB News Rising…

"ants

I had so much fun creating alternative versions to the classic Ants on a Log.

"ants

Celery, peanut butter, raisins

"ants

Celery, cream cheese, craisins

"ants

Celery, hummus, black olives

"ants

Red pepper, guacamole and black beans

Now, let’s hear from you!
