Check out these 15 delicious and healthy meal ideas that are husband and child-approved for when you hit that inevitable meal planning rut.

I finally figured out a photo organization system that works for me. ::cue the angels:: Considering the mass amount of pictures I take on a weekly basis, that’s no small feat. Among these, I have a folder of meal pictures that I consistently add dinners (and sometimes other meals) I’ve snapped pictures of and for which I don’t yet have a set purpose. I scrolled through the other day when I was in a meal planning rut and realized how grateful I am to have an online resource in which I keep a large number of weekly meal plans and also healthy dinner ideas to reference.

So with that over explanation, I hope these 15 healthy meal ideas can offer some inspiration for those inevitable times when we all hit a what’s for dinner? rut.

Lunch or Dinner

Greek Pasta Salad made with Chickpea Rotini over Mixed Greens

Dinner

Roasted Onions, Carrots, and Broccoli in Italian Seasoning with Sauteed Spinach and Sausage

Dinner

Crockpot BBQ Pulled Pork Over a Baked Potato with Garlic Dill Pickle Kraut

Dinner

Mom’s Homemade Spaghetti Sauce over Zoodles with Side Salad

Dinner

Grilled Pesto Pizza with Roasted Red Peppers and Fresh Mozzarella

Lunch or Dinner

Greek Veggie Wrap with Sliced Cucumbers

Lunch or Dinner

Instapot Spicy Carrot Soup with Grilled Cheese

Dinner

Sous Vide Steak over Mixed Greens with Sauteed Peppers and Onions, Avocado, Jalapenos, Sour Cream, and Salsa

Breakfast or Lunch

Toasted Everything Bagel with Sriracha, Avocado, Red Onion and an Over-Medium Egg

Dinner

Grilled BBQ Drumsticks with Roasted Potatoes and Garlicky Green Beans

Dinner

Spicy Grilled Sausage with Roasted Sweet Potatoes and Salad

Lunch or Dinner

Rice Cake Topped with Guacamole, Sliced Tomato, Roasted Sunflower Seeds, and Kale Microgreens

Lunch or Dinner

Simple Tuna Salad on Siete Foods Tortillas with Strawberries

Dinner

Boiled Shrimp with Grilled Corn and Grilled Summer Squash

Lunch or Dinner

Romaine Based Salad with Rotisserie Chicken, Tomatoes, Avocado, Blue Cheese, Kale Microgreens and Hemp Seeds

Ah yes, and I should mention that all the meals are husband-approved.

Also, I owe you a grocery budget update! I’ve been experimenting the past 2-3 months with a monthly budget instead of a weekly and it’s making a difference in our overall total. It includes some store-hopping (Bj’s, Aldi, Whole Foods), but since it’s done on a monthly basis instead of a weekly, it’s manageable. My CSA starts next week too so I’m interested in seeing how that switches things up. Stay tuned!

YAY SPRING FOOD!

What is the best meal you’ve eaten lately?

Check out these 15 delicious and healthy meal ideas that are husband and child-approved for when you hit that inevitable meal planning rut….

[1746
1554
