The bad.
I’m bummed. Two days from now is Racefest, the 10k I’ve been training for. Unfortunately, I’m not going to be able to run (OK, wog) it because of some last minute work stuff with David. Instead, we’ll be gone and my little registration will be left in the dust. (Can you transfer registrations? If so, anyone want it??)
I’m not sure what to do. I need to look and see if there are any other 10ks soon. If not, do I map and run my own? That sure sounds anticlimactic after the hard work I’ve put in. Any ideas?
The better.
The other day I introduced you to my baked banana oat cups.
Well, I pulled the recipe off in order to tweak it. I got quite a few email and comments about the missing link, so I’m sorry I didn’t give you a heads up. The good news, though, is that I baked a new batch last night with a revamped recipe and now they’re an even better warm and delicious quick breakfast. David liked them, too, and thought they were even better reheated the next day. Note: if you’re saving them to eat throughout the week, you must freeze them after they cool. To warm up, simply wrap the frozen oat cup in a paper towel and nuke for 1 minute.
Anyway, the new recipe (and nutritional info) can be found HERE. Let me know what you think!
The best.
A few have asked for an update on Hailey’s eating adventures. To date, she’s eaten: avocado, broccoli, sweet potato, cheese, bread, raspberries, blueberries, mango, carrots, acorn squash, apple, cucumber, Greek yogurt, an olive, green beans, egg yolk, baked oatmeal and brown rice.
Most of the time I give her large pieces that she can handle herself, though other times (and with smaller foods like berries), I’ll pull off tiny bites and let her pull my hand to her mouth to “feed herself”.
It’s really been fun watching her discover new tastes. She makes some funny faces, but usually goes back for more. I think her favorite thing so far has been a strip of grilled cheese. She downed it! Overall, I’m focusing on as many veggies as possible, because of course she’ll like grilled cheese. She is human, after all.
Now off to the pile of laundry so we can repack it all again. Always an adventure

I haven’t looked at recent race schedules but would love to sign up with you and we can both make up for the missed race! I am not in shape but will get there 🙂 Hope you guys have a good trip this weekend!

Do you think they have 10ks in the fall around CLT? I’d love to do one before then, too, but would fall give you enough time to get back into things? I’d love to run one with you!
Brittany says
PS- If I click on your name, it doesn’t go to our site. Maybe recheck the web address?
Lauren says
Thank you for the heads up! I think the link might be wrong on my phone (which I will check) but hopefully this one works. I am sure there is a 10k in the Fall–always tons of races around here. That will be plenty of time for me to get back into it! I am hoping to do another half as a goal but I will just see how things progress. 🙂

I can’t wait to try the oat cups! But I’m curious why they have to be frozen, and not sealed in an airtight container or something?
Brittany says
I think the banana used to bake them makes them not taste as great the next couple days. You may be able to put them in airtight and they’d be good, but I just think they taste fresher if you freeze them (even though that doesn’t make much sense :))

She’s soooooooooo cute! Ah! Post more pics! I definitely want to check out the banana oat cups. They’re cute! But not as cute as that dear baby of yours 🙂

Brittany, I’m so sorry you won’t be able to run in your 10K! At least all the work and training you put in wasn’t a waste! Can exercise ever really be a waste?? Hailey is just so, so adorable! Have fun on your adventure!!
Brittany says
I definitely agree, exercise is never a waste! But I really want to see if I can run a 10k, and so hopefully I will find one to do. I like the idea of having a challenge to work towards 🙂

Ugh such a bummer!!! If it were me, I would try to find another race to run soon. There’s nothing like crossing that finish line with a bunch of people cheering for you … it’s such a high! 🙂
Emily @ Perfection Isn't Happy says
I love that she’s eaten avocado already! I’m fairly new to your blog so you’ve probably already talked about this, but did you make your own baby food? I’m a few years away from having kids, but it interests me :).
Brittany says
Hi! Welcome 😉 I am actually taking a baby led weaning approach where she feeds herself, so she ends up eating a little of whatever I eat. Here’s the post talking about it: http://www.ahealthysliceoflife.com/2012/03/27/our-adventure-with-baby-led-weaning/
So I guess I do make my own baby food! 🙂

I think you could have gotten a refund or transferred your bib for Racefest up until last weekend. Bummer.
I’m doing the Lake Wylie Splash Dash 10k on June 9! Come do it with me 🙂
Hailey is too cute! We’re going to start solids in a few weeks and I’m so excited!
Jamie @ Don't Forget the Cinnamon says
You have such an adventurous little eater!!!!
I would try to find a different race to sign up for–I know that I always run significantly faster in a race environment than on my own no matter how hard I push myself. It’s so rewarding to see such a fast finish time after working hard to train!
Christie says
I am so bummed for you! After having trouble with that training program I know you were probably stoked to crush RaceFest =( While Jen mentioned that there might have been a deadline to transfer your bib to next year, I bet you could get ahold f the race director and they would still let you. I definitely recommend finding another 10K race soon- I think the Y actually has one in just a few weeks!!!
Glad Hailey is having fun exploring new foods. I loved that phase with Riley, especially that they seem to enjoy veggies!
Madeline @ Food Fitness and Family says
Most races have their own policy about transferring bib #s … you could always email them!
As for foods .. Emmie’s favorite food, hands down, is steamed broccoli. She can’t get it in her mouth fast enough! It cracks me up. She likes to hide it in her cheeks to save for a snack 😉 Her second favorite is avocado which she DESTROYS. LOL. I love watching her experience new foods! She also drastically prefers feeding herself over anything on a spoon so we are definitely adopting more of a BLW approach at this point too!

I’m sure you are so dissapointed not to be able to do the 10K this weekend! There’s a 10K down in Ballantyne in May, and I love the Brixx 10K in Charlotte in the fall. Hopefully, you can make one of them!

Brittany,
made your muffins last night and fed them to the kids this morning as a substiture for their normal prepackaged oatmeal, and they loved them, my 18 month old kept saying more more. That is three less dirty bowls for me to wash when I get home from work! Thanks!!!
