Another week, another edition of healthy kids’ eats! This week I’m focusing on breakfast. Hailey (9 months old) was introduced to solids via baby led weaning and enjoys a wide range of breakfast food from yogurt to waffles, but since I enjoy eggs so much, she often ends up eating them, too.
She’s funny with eggs in that I can’t give them to her when they’re too hot, but if I wait until they are cold, she won’t eat them. So egg breakfasts require pinpoint accuracy in timing.
Also, like her mama, she prefers some goodies in her eggs. That’s how I came to create the
Baby Power Omelet
First I small dice onions, peppers (this one happened to be purple!) and spinach. I add some butter to a hot pan and sauté the peppers and onion over medium high heat.
Once soft, I turn the heat down to medium low and add the spinach.
I add in one scrambled egg and a teaspoon of nutritional yeast!
Nutritional yeast is a wonderful vegetarian source of B-12, folic acid and many other nutrients and amino acids. I sprinkle it on broccoli, popcorn, mac and cheese and it’s great with eggs.
As the egg cooked, I flipped it like a pancake and folded it onto itself to create the baby power omelet!
Garnished with parsley (which Hailey also ate) and cut up grapes on the side. The true test? What did Hailey think?
I must have served it at the correct temperature because she downed 90% of the omelet and all the grapes. Omelet success!

I use Nutritional Yeast on everything! My 2 munchkins (and I) love how it gives a little cheesy flavor to the food.

We started giving W yogurt this week, and we may try eggs soon, too. Not going to lie: when Jeff suggests a new food to give W, I come here and check to see if you’ve given it to H! You’re definitely the baby feeding guru 🙂

I love the egg recipe…if only I would get Ella to eat them!!! I love using nutritional yeast in some of the dips I make her. Especially a broccoli “cheese” dip…so good!!!

Kherie is also super picky about her egg temperature…if it’s too hot she quickly tosses it down, if it’s too cold she makes this horrified face and tosses it over the side of the high chair. Speaking of tossing, that has become her new favorite game when she is finished, let’s chuck things over the side and say “uh oh”…it’s pretty cute though so I don’t get mad haha.
