Hi y’all! Just popping in during nap time to share this week’s menu. I’ve been unorganized with my meal planning lately and want to go into this week feeling truly prepared.
This morning we stopped by the new location of The Meat House in Mooresville. This place is awesome! (I only had my phone with me, thus the lackluster photos)
They just opened and are giving free steak tips away if you stop in to check them out. They have a huge selection of quality meats, chicken, seafood and wild game, like rabbit. They also carry some local meats, like bison from Asheville. They have sample set up throughout the small store of breads and oils, marinated steaks, bbq chicken and dips they carry as well.
It’s a food fanatic’s paradise. They also carry craft beers and wine, making it a one stop shop for a fancy dinner at home. Needless to say, I was impressed.
I hadn’t planned our weekly menu yet, but the mussels were only $3 a pound, so I couldn’t say no. We also bought thin slices of steak. They vacuum sealed it for us with a honey bourbon marinade. We are going to make some homemade beef jerky later today and David is quite excited!
Anyway, after stopping by there and taking note of the food we have on hand, I planned out the upcoming week-
Sunday– Mussels in Tomato Broth with Crusty Bread
Monday– Spaghetti Squash with Homemade Meat Sauce
Tuesday– Veggie loaded Chicken Caesar Salads
Wednesday– Wild Salmon with Fried Quinoa & bok choy
Thursday– Vegetarian Burrito Bowls
I plan on making a big batch of lentil vegetable soup for lunches as well as using up the homemade black bean burgers I have in the freezer.
Have you dug through your freezer lately? I found black bean burgers, chicken, ground beef and wild salmon patties. I tend to stick stuff in there when there is a sale, then I forget about. Finding all those goodies means that groceries this week will be cheap- just a lot of veggies and some quinoa and barley from the bulk bins. Wahoo!

I had spaghetti squash for lunch today! It’s one of my favorites. I have leftovers i’ll be excited to eat this week. I’m also hoping to try a new crock pot recipe.

I made this slow cooker recipe I found on Pinterest tonight, and I was hoping to have the leftovers for dinner tomorrow. Unfortunately, it was a fail. Such a bummer. It was so bad, that I threw the rest out. Grr … nothing worse than money going in the trash!! 😉

Sounds like a cool place! Tonight I’m having some sort of egg dish. Probably an egg and cheese sandwich. Not sure about the rest of the week! I don’t really plan.

There was a Meat House in Austin that had just opened up when I made my very first steak on my own. [Oddly, this was the night before I went vegan.] I remember they were super helpful and it had lots of fun foodie finds, too. Homemade jerky? YUM! [Yes, this is the vegan speaking.]
Speaking of veering off the vegan trail, mussels in tomato broth with crusty bread sounds like HEAVEN on this chilly day. I hope it was a satisfying Sunday supper. 🙂

Preferring more veggies like spinach or cabbage in your food is quite good for your health. As they are rich in proteins and low calorie so no chance for extra weight gain.
