Today for Munchkin Meals I’m sharing some fun lunch ideas just as the kids are getting geared up to go back to school. They are balanced, healthy meals that you can totally customize to fit your child’s tastes.
Since I snapped these pictures, I’ve invested in this lunchbox. It may cause a little sticker shock, but I’ve found it is SO worth it, as it is easy to clean and so durable. We’ll be using it for years!
1. The Yogurt Parfait Bar
2% Greek yogurt, Garden Lite’s Carrot Berry Muffin (you can put from freezer right into the lunch box and it will be thawed by eating time), crushed Coconut Almonds with cacao nibs, Love Grown Oat Clusters and strawberries.
Switch it up suggestion: Sub cottage cheese for the Greek yogurt!
2. Sandwich Kabobs
Cocktail straws threaded through bread, grape tomatoes, cheddar cheese and Applegate Farms Roasted Turkey with red pepper strips, blueberries and Pacific Food’s Chocolate Almond Milk.
Switch it up suggestion: Ham instead of turkey or add a small side of ranch for dipping!
(The kabobs were a bigger hit with Hailey than I even anticipated!)
3. The Snack Plate
Justin’s Maple Almond Butter Packet, sliced string cheese, edamame, grapes and whole grain crackers.
Switch it up suggestion: Graham crackers instead of regular crackers, plus cacao nibs to make it more of a sweet treat!
4. The Classic
Peanut butter, honey and coconut flake sandwich with carrots, pear slices and and Pacific Food’s Vanilla Hemp Milk.
Switch it up suggestion: Almond butter if your school is peanut-free, add banana slices on the sandwich too!
5. Pasta Salad
Bowtie pasta with black olives, red pepper and spinach in your favorite Italian dressing, blueberries and a sliced boiled egg.
Switch it up suggestion: Add small balls of Mozzarella and diced salami to make a heartier pasta salad!

Lot’s of great healthy inspiration, as I was reading this my three year old was pointing and choosing items she wanted (especially the blueberries, they are her favorite).
When I was growing up I never packed my lunch, I was actually homeschooled until the fifth grade, but even after I ate school lunches. My all-time favorite was always the round cheese pizzas they served, but I also really enjoyed the scalloped potatoes with a roll.

I remember eating a lot of bologna sandwiches, but occasionally I would get a Lunchable (which of course I thought was super cool) or sometimes Spaghetti-Os in a thermos and that was a nice change. What I looked forward to most were the multiple treats I always ended up with – Dunkaroos, Little Debbie treats, Gushers, Fruit Roll Ups, etc. I ate so much junk and I loved it back then! My kids will never know the joy of that kind of stuff 😉

I can’t remember much of what I was sent to school with while young. I do know that once I hit middle school/high school my mom made sure I had healthy lunches! Grilled chicken, turkey burgers, salads, and veggies! I got the strangest looks from other kids but I am so proud that my mom helped put me on the right track!

My mom was a rockstar lunch packer! She would make us really good pita pocket sandwiches (I think I was just in love with the “pocket” part). And she had a little notebook that she wrote a note in every day and stuck inside my lunch bag. Best part!

I have Celiac Disesase, so my favorite lunch in childhood consisted of a “sandwich/quesadilla” made on 2 corn tortillas with turkey, cheese and MUSTARD. I LOVED Cool Ranch Doritos (they were a special treat, and they smelled like feet). We would always have a veggie of some sort (carrot sticks), a mini-reeses cup and maybe some fruit!
Now, I can see that there were many nutritional gaps in that lunch, but we always had a protein and veggie rich dinner to make up for some of that!

My favourite lunch as a kid was a lunch able! Ack!! I can’t even imagine eating that now, OR feeding them to my kids! Too bad three of the five ideas have nuts, it’s a real pain to try and make different healthy lunches that never contain nuts (on account of many schools being nut free) , especially if you eat a grain free diet.

I had the same packed lunch (I never bought) from K-12. I’m not even kidding. There were variations of course, but it was mainly a turkey sandwich on whole wheat, sliced cucumbers or carrots, pretzels or chips and fruit. As an adult, I could still eat this same lunch every day and not get sick of it 🙂

i absolutely adored pb and js! i would never, ever get tired of them and my mom tried to switch things up by adding something to the sandwich sometimes – bananas, honey, raisins, chocolate chips, walnuts, etc. your ideas seem like a lot of fun as well! so pretty and presentable (and tasty!)

I always like making “Lunchables” style lunches using silicone muffin cups to hold the crackers and other goodies, then stuffing grapes, hard fruit slices like pears and apples or carrots around the cups. They work pretty good for grown-up lunches too!
