Good morning from my meal planning spot, snuggled next to Finley on the couch with a cup of coffee! From late June until now my meal planning has really fallen by the wayside. Between hosting friends, traveling, working on fine tuning a few recipes I’ve been wanting to bring to you, and overall just enjoying the chaos of summer, I’ve just been making dinner up as I go. I’m totally fine with it at the moment, as I figure it will make the return to routine come this week feel that much more satisfying 🙂
I’m also returning to sharing our weekly meal plans and my grocery spending. Ah, yes, I think I’m ready for the return to a little structure. But first- here are some of the at home summer meals we’ve been eating!
- Slow cooker whole chicken with roasted potatoes and purple cabbage over rice
- Quick chicken burgers with a simple salad and my fav homemade dressing
- Deli style chicken salad (minus the grapes) over a simple salad
- Honey Chili Lime Steak burrito bowls with rice, sauteed onions, peppers, and mushrooms, lettuce, avocado, and sour cream
- Copycat Cava Bowls
- Simple grilled sirloin, roasted asparagus, avocado
- Egg and egg white omelet with spinach, onions, and tomatoes
- Kids’ current favorite breakfast: a scrambled egg and cheese wrap and fruit
- Cauliflower rice, spinach, and mushroom stir fry with eggs
- David’s Famous Chili
- Grilled Ranch steak and a Daily Harvest Grains
- Kale salad picked up from Fresh Chef paired with a slow cooker whole chicken
- Smoked brisket and pork tenderloin by David with a cucumber tomato salad, corn on the cob (from frozen), and kraut
- Homestyle chicken noodle soup made with brown rice and millet ramen
- Crumbled ground beef and spinach with mustard and ketchup and kraut
