As usual, you could totally scratch off the ‘for kids’ because I’m chowed down on quite a few of these myself. Ah, the duties of recipe testing
The best part about these little muffins is that they are adaptable to any diet! Simply pick your pancake mix of choice: from scratch buttermilk pancakes your thing? Go for it! Prefer gluten-free? Grab some Bob Red Mill! Need it to be vegan? Use a mix with no egg or milk. Whole wheat strike your fancy? Do ittttt.
Preheat the oven to 350 degrees.
Spray a muffin tin well with nonstick spray (or you can use coconut oil). Add about 2 Tablespoons of batter to each cup.
Then, choose your toppings or let the kids pick what they’d prefer!
Other fun mix-in ideas:
-sweet potato or pumpkin puree
-protein powder
-shredded carrots
-dark chocolate chips
Add about 1 Tablespoon of mix-ins per cup.
Really push the toppings into the batter, unless you want them to just top the muffin when baked.
Bake for 12-14 minutes until a toothpick can be stuck in and come out clean.
You can serve them up right then and there…
or let them cool completely and keep them in an airtight container for fast breakfasts all week long.
Simply microwave for 15ish seconds or, a preferred method, the toaster oven.

Ooh! Another fantastic recipe! These muffins are definitely something that my entire family would love- not just the Toddler. I’m pretty sure I could eat an entire batch on my own 🙂
One more thing – I like the new layout! Very clean (although I liked it a lot before, too). I have to disagree about pressing the read more button – I think it’s nice to be able to see more posts on your homepage, and then click on the post I want to read more of. Anyway, I think it’s nice that we have to click to read more.

Two questions,
How long would you bake these if using mini muffin find and would I sti put two tablespoons of batter in each?
Also, on one of your baby led weakng recipes, sweet potato rounds, how long wound I bake those and what temperature?

Hi Jennifer, check the mini muffins after 8-10 minutes and I would use less batter, too. Fill each mini cup about halfway, or a little less.
I bake my sweet potato rounds for about 40 minutes, flipping half way at 350, but oven will differ slightly, so just keep an eye on them. ENjoy! 🙂

Typically I use a mix and love the Kodiak Cake brand for mixes. Delicious!
