This 30 minute sweet potato butter is simple to make and is the perfect fall spread for biscuits, on pancakes, in oatmeal, or even try it on top of ricotta toast. It makes enough to keep a jar for yourself and share the goodness with a neighbor. Enjoy!
There is no mistaking my love for fall. I know I’ve already gone on and on about how I’m burning through candles at a record pace, enjoying late afternoon walks with the girls through crunchy leaves and already have several pumpkins begging to be carved on my doorstep. The cozy feeling of fall extended itself into my kitchen as well in the form of this rich, subtly spiced and slightly sweetened sweet potato spread.
This recipe is super simple- gather the 9 ingredients, mix together on the stove, and simmer.
In 30 minutes of simmering, the sweet potato butter will become a thick and creamy spread, smelling just like a fall kitchen should.
From there, the possibilities are endless. Jar it up and share it with friends and neighbors (it should stay good for up to three weeks in the fridge). Spread it on muffins or biscuits. Mix it into oatmeal and sprinkle toasted pumpkin seeds of top. Put it on pancakes.
Or toast an English muffin, top it with a thin layer of ricotta and sweet potato butter and broil for a minute or two (watch it closely so it doesn’t burn!). Sprinkle toasted pecans on top and enjoy sinking your teeth into a taste of fall with your morning coffee.
However you choose to enjoy this decadent fall spread, you’ll feel the fall warm and fuzzies take over. I hope you enjoy friends and as always, if you try it, please let me know what you think!
