I feel like I need to start with some commentary on the Super Bowl, but honestly… I don’t have much. I’m a college football girl for life and though I did enjoy seeing Missy Elliot do her thang and take me back to my college days, keeping Kaitlyn up past her bed time proved to backfire. At least the friends and food was fun!
I contributed this Layered Hummus Dip to the party.
I love it because it comes together so quickly and no recipe is needed. Simply layer
– 1 large container or hummus (I like plain since the toppings add so much flavor!)
– finely diced cucumber
– finely diced red bell pepper
– finely diced red onion
– sliced kalamata olives
– crumbled feta
– sprinkle with chopped cilantro or parsley
Of course, there are endless flavor combinations, and it always adds a nice pop of color to the spread.
Speaking of food, I’ve really been enjoying it lately.
Instead of going out Saturday night, we opted for a family shopping trip to Whole Foods (walk in beer fridge included- Hailey just thinks how cold it is in there is hilarious)
and making dinner at home.
It’s something we are going to try and do more often. Even buying fancy, prepped items (like pre-made burgers) at Whole Foods ends up being much less expensive then dinner out for all of us.
Breakfast at home is proving to be easier then going out lately too.
This egg scramble with tomatoes, onions, goat cheese and crumbled bacon was delicious.
I’ve also rediscovered the joy of zoodles (zucchini noodles for those that aren’t into cutesy names. Cough, David, cough).
Certainly you’ve seen spriralizing everywhere. When it first got big, I bought a spiralizer, but then mostly forgot about it until my friend Danielle mentioned it to me last week. Now I can’t get enough!
I sauté them in olive oil with tomatoes and onions, then add a sprinkle of garlic powder, kosher salt and red pepper flakes. Sometimes shrimp too. Delicious!
Hm, let’s see what else.
Boiled eggs on salad.
And homemade laraballs are back to being a staple too.
This time I processed the ingredients a little finer than usual and added raisins.
They are perfect for when you just need a little something to hold you over.
Ok, I’ve now talked myself into being hungry so I‘m off to make breakfast with Kaitlyn in tow. Evidently the beer she had last night didn’t help her sleep any longer.
I kid, I kid.

Ooh, those Laraballs look delicious! I’m so glad you mentioned them again because I remember seeing them on the blog way back when you first posted them, but that was when I thought I didn’t like dates or Larabars. I’ll have to try making them now that I now I love both of those things 🙂

Those Laraballs sound so yummy! If you were going to make them with coconut added, how much would you add? I’m not good at guesstimating, I need exact measurements to make or cook anything 🙂

That hummus dip is genius! I ALWAYS bring veggies and hummus to parties (including the Super Bowl party we attended last night), and I can’t believe I’ve never thought to add in extras to make the hummus a bit more exciting! Thanks for the great idea :). So simple, but so perfect.

The best thing I ate on Super Bowl Sunday was a double chocolate macaroon from a bakery in Asheville. It was…wow. I didn’t eat it while watching the Super Bowl, but I did eat it yesterday 🙂

That dip looks delicious!! My signature party dish is artichoke dip. Equal parts mayo, artichoke hearts, and parmesan cheese. It’s so unhealthy but SO good!!

The best thing I ate this weekend was my bean dip! It was so good…I ate almost 1/4 of the dish! 🙂
And the best non-SB related food I ate was a vegan chocolate chip cookie at the farmer’s market. YUM!

It was just my husband, daughter, and I for the super bowl so I made some buffalo chicken bites, per my husband’s request, and they were delicious.
