These delicious, healthy and refreshing watermelon popsicles use fresh fruit and can stay in the freezer for weeks!
We are officially on summer schedule, kicking it off in style this past weekend. We went out on the boat for the first time this season, met up with friends, watched the kids play king of the hill on a stand up paddle board, went hiking at Stone Mountain Park, and ate grilled corn on the cob and tomato sandwiches.
We’ve topped off our summer box and though I wouldn’t let us start reaching into it until June (that’s today!), we cheated a little and already indulged in one highly anticipated activity- making POPSICLES! But not just any old “freeze juice in a Dixie cup” popsicles (though those are pretty awesome too…), festive watermelon popsicles that just scream summertime!
These might seem like fancy pants watermelon popsicles, but they really aren’t hard to make and the multiple layers build the anticipation for the sweet treat. And a treat it is! The kids will love making these and they are even more fun to eat. We worked our way through them pretty quickly on our own, but I think these would be adorable to make for a summer play date with kids friends, OR (taking a cue from the rooftop bar in Charlotte), for an adult poolside shindig, turned upside down into a glass of Prosecco. Just saying…

Description
These delicious, healthy and refreshing popsicles use fresh fruit and can stay in the freezer for weeks!
Ingredients
For Watermelon Layer:
4 cups cubed watermelon
2 tablespoons powdered sugar
1 tablespoon fresh lime juice
For Coconut Layer:
1/3 cup canned cream of coconut, well-shaken
1 tablespoon powdered sugar
For Honeydew-Lime Layer:
1 cup cubed honeydew melon
1 tablespoon powdered sugar
1 teaspoon zest of organic lime
1 tablespoon lime juice
Instructions
Combine ingredients for watermelon layer in a blender. Pulse until smooth. Pour mixture evenly into the compartments of a popsicle mold to fill to about 3/4-full. Place lid and wooden sticks into popsicle mixture, as directed by popsicle mold instructions. Freeze for at least 2 1/2 hours.
In a small bowl or measuring cup, combine ingredients for coconut layer. Pour evenly into popsicle mold over watermelon layer. Freeze for at least 30 minutes.
Combine ingredients for honeydew-lime layer in a blender. Pulse until smooth. Pour mixture evenly in on top of frozen coconut layer to fill popsicle mold. Freeze for at least 2 hours or until frozen through.
Keep in freezer for up to 4-6 weeks.
Notes
For this recipe, I used this mold.
Also, if you don’t want to use the added sugar, you can leave it out! The fruit is sweet and refreshing on its own (but my kids preferred a little extra boost of sweetness).

On another note – that tomato sandwich. Can you tell me what the layers are of? Is it hummus, feta cheese, cucumbers, red onion, tomato, spinach and roasted red pepper?
