Description
This simple, lettuce-less Greek side salad is a flavorful family favorite. Perfect as a side dish to any meal, or serve with grilled chicken to make it a main event.
Ingredients
For the Salad
4 c grape tomatoes, halved (1.5 lb)
2 medium cucumbers, seeded and diced (4 c)
1/4 medium red onion, finely diced (1/3-1/2 c)
1.5 c halved kalamata olives
3 oz (1/2 c) chopped feta cheese
For the Dressing
1/4 c olive oil
3 Tbsp red wine vinegar
1/2 tsp oregano
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
Instructions
Combine tomatoes, cucumber, red onion, and olives in a large bowl.
In a small bowl, whisk together dressing ingredients until thoroughly combined.
Sprinkle feta cheese on top of salad and pour dressing over the salad. Mix gently until well combined.
For best results, cover and let chill in the fridge for an hour before serving.
