I’m hanging out with the WCCB Rising crew again this morning making a healthy, fun meal for the kids and couldn’t help myself from sharing it here, too!
I hadn’t had a corn dog in… shoot, I have no clue how long, but when David mentioned them last week I thought it would be fun to make a healthier version of this kid-favorite. Not only is this ‘recipe’ ridiculously easy, it will be loved by even the pickiest eater, no doubt!
The key is in choosing the right ingredients.
Bob’s Red Mill cornbread mix, as well as all their other products are great. They are non-GMO and each product I’ve tried is high quality. Not all mixes are created equal. The popular Jiffy Cornbread mix contains hydrogenated oils (trans fats) so don’t forget to read labels.
I’m also a big fan of Applegate Farms. They offer an organic, grass-fed, all-beef hot dog that is delicious!
This meal takes all of 10 minutes to prep and 10-12 minutes to bake. Steam some broccoli while they are in the oven and viola! A well-rounded dinner in 20 minutes.
Hailey loved the hot dog “surprise” in the middle.
I loved that it made about 35 mini muffins, meaning I’m freezing some of those bad boys for future quick lunches and dinners!
Healthy Corn Dog Bites for Kids

Description
These bite-size corn dog bites are perfect for kids or to serve as a snack during football season, or anytime!
Ingredients
- 2 1/2 cups cornbread mix (Bob’s Red Mill recommended)
- 1 large egg
- 1/4 cup olive oil
- 1 1/4 cups water
- 1/2 cup shredded sharp cheddar cheese
- 5 hot dogs (Applegate Farms recommended), cut into 1 inch pieces
Instructions
- Preheat the oven to 400 degrees.
- In a large bowl, mix cornbread mix, water, oil, cheese and egg together until well combined.
- Grease a mini-muffin pan.
- Spoon cornbread mixture into each cup, filling each cup about half way.
- Place a piece of hot dog in the center of each muffin cup.
- Bake for 10-12 minutes until cooked through and golden brown.
- Remove from oven and allow to cool. Enjoy!

Love Applegate (and the fact that Target carries it now!). When I was little I could have lived off of grilled cheese sandwiches, and they’re still a favorite today, just more grown-up with fancier cheese and bread. 😉

I’m actually making these on Super Bowl Sunday along with a few other snacks! My mom always made us cinnamon toast for an evening snack growing up- somehow I cannot seem to make it as good as her! Good memories 🙂

I made these today, but mine turned out really dry. I think 2 1/2 cups of cornmeal mix may have been too much. I added mashed avocados to them too instead of the olive oil. I will try to make them again with the oil next time.

I love your creativity of the mashed avocados! If you are an avocado fan, try using avocado oil next time. I think that would work really well!

Should have 5 stars for being easy and freaking adorable! However my hubby & kids and I didn’t like the flavor… :(. The cornbread mix was really blah, especially contrasted with the super flavor of the hot dogs (I got all the suggested brands, those hot dogs are our norm anyway). Maybe I’ll double the cheese & add salt next time? We ended up popping the hot dogs out and pouring honey in the muffin hole. They were ok that way. We did broccoli like suggested, and that did go well with it! If I retry and change up the recipe a bit, I’ll repost for posterity.
