This fresh and flavorful avocado salsa makes a great hearty party dip or a delicious topping for grilled chicken or fish!
We had a special weekend over here, as Kaitlyn was dedicated on Saturday.
We were thrilled that Mema (David’s mom) came up for the occasion, despite our house being in a construction zone state. It was a beautiful ceremony and Kaitlyn actually tolerated the fancy dress pretty well. After all, it had pearls to chew on.
It was so sweet to see her in the same gown that Hailey wore a few years ago and we all enjoyed the morning and catching up with friends.
Outside of that, things were rather low key. After being coerced into Mexican food Friday night (reallllllly had to twist my arm for that!), I got back into the cooking groove after being out of it for quite a few days.
David wanted to sous vide some chicken, so I prepped an easy avocado mango salsa to top it.

- Prep Time: 15 mins
- Total Time: 15 mins
- Yield: 2 cups 1x
Ingredients
- 3 small-medium mangoes, peeled and diced
- 2 medium avocados, diced
- juice of one large lime (about 1 Tbsp)
- 1/2 a small red onion, finely diced
- 2–3 Tbsp fresh cilantro
- salt and pepper to taste
Instructions
- Combine all ingredients in a large bowl. Mix gently and serve immediately.
The salsa was great, as was the juicy chicken! The girls ate it up too, which is nice since Kaitlyn seems to be a bit finicky about avocado in general. How is she my child?!
The rest of the weekend was rather low key, full of the regular chores and the added bonus of trying to get Minnie Mouse chapstick out of the screen.
