Sweet summertime! Despite the back to school pictures that have begun flooding facebook, we are still in the season of summer. Usually by this time of year visions of college football and chili are dancing through my head, but honestly this summer has been quite nice and I’m not in any rush to see it go.
The girls are at great ages for fun and we’ve been filling our days with all sorts of activities. And then, there’s summer food. Does it get any better? Fresh produce, trip to the farmers market, dinners on the grill, and sweet treats on the back porch before the sun sets.
Fresh peaches will forever remind me of my Nannie’s house in Georgia, or “the farm” as we’ve always called it. Growing up we’d visit and always make a trip to the peach orchard. They had the juiciest, sweetest smelling peaches to choose from, and alongside them, homemade peach ice cream.
We’d always snack on a few straight from the orchard and bring plenty home with us to enjoy. One of my favorite peach dishes was cobbler. And it still is. My mom’s cobbler recipe, which she got from her mom, is simple to make and heavenly to eat. The crumbly, crisp topping over warm peaches with a big scoop of vanilla ice cream beside it is a combination that rivals even chocolate and peanut butter as the best possible combination.
Thanks to a recent BOGO sale at our local Publix, my freezer is stocked with plenty of Mayfield Creamery Ice Cream flavors, but for peach cobbler, it’s tough to beat a classic vanilla.

Description
This Ultimate Peach Cobbler Recipe has been passed down in my family for years. The simplicity of the ingredients allows the juicy sweet flavor of the peaches to shine. A true staple of summer!
Ingredients
- 8 large peaches
- 1/2 cup water
- 1 cup sugar
- 1 cup self-rising flour
- 1 egg
- 6 Tbsp butter
Instructions
- Preheat oven to 400 degrees.
- Wash peaches, then slice and peel them. Layer them into a baking dish (I use this 11 inch roasting dish but a 9×13 Pyrex will work). Pour the 1/2 cup of water over the peaches.
- In a small mixing bowl, beat the egg, then add the sugar and flour. Mix well until mixture resembles a coarse meal. Spread evenly over the peaches.
- Melt 6 Tbsp of butter and pour over the peaches and topping as evenly as you can.
- Bake for 10 minutes (uncovered) and 400 degrees, then lower temperature to 350 degrees and bake for an additional 35-60 minutes until the peaches are bubbling and the top turns golden brown. The time will vary based on the size of your baking dish and depth of your peach layer.
- Remove from oven and allow to cool for 5-10 minutes. Scoop into bowls and serve with Vanilla Mayfield Ice Cream.

Love a good cobbler! So easy and delicious. I always add some rolled oats to mine to make it more country/rustic? Gives a good chew too with that lovely melted butter! Oh and cinnamon and vanilla, but I am addicted to those flavors 🙂
