These ice pops are sweet, with a hint of tart from lime, making it a refreshing summer treat. Kids and adults will love this special treat!
Each week at the Davidson Farmers Market, there is a King of Pops cart. I don’t usually get overly excited about ice pops, but mannnnn these are in a league all their own.
One weekend, while at the market, Hailey chose a PINK one (of course) which happened to be raspberry lime flavored. Incredible. I decided I had to take a stab at creating my own.
I kept the recipe simple and used frozen organic berries instead of fresh because they are only $1.99 at Harris Teeter.
The process is a simple add, blend, pour and freeze set up. I guess you could add strain in there if you wanted to get rid of the seeds, but isn’t seeds in your teeth part of the fun?
These turned out quite delicious and I used popsicle molds with drip trays and straws so there wouldn’t be any messy clean up!
HA. Clearly that worked out swimmingly.
But they are pretty tasty and only take a few minutes to make. Enjoy!

Description
Sweet with a hint of tart from lime makes this a refreshing summer treat.
Ingredients
- 2 1/2 cups Raspberries
- 3/4 cup Coconut Water
- Juice of 1 Lime
- 1/2 tsp Lime Zest
- 2 Tbsp Agave
Instructions
- Put all ingredients in a blender and blend until smooth.
- Pour into popsicle molds and freeze for a minimum of 4 hours.
- Makes 4 ice pops.

These look so yummy and easy to make!! I think my favorite was a pop I had at a festival in our old home town from a food truck that did only organic frozen pops 🙂 it was Strawberry avocado – they had the best combos!

It would never have occurred to me to put coconut water in with the raspberry lime pops! What a great idea! My favorite ice pop flavor growing up was simple cherry, but there are so many exotic flavors these days…

Yum! There is a new-ish place in Birmingham called Steel City Pops, and I had one of theirs last week at an event we went to – strawberries and cream flavor. YUM!
I hope the sleep situation works itself out soon. High fives for K sleeping in the crib! I am not sure how you made it this long. I could never sleep with my son in the room when he was first born. He grunted and wiggled and talked in his sleep. 🙂 So he was in the crib at 3 weeks. And he is still a noisy sleeper to this day.

I need to try these!! My first popsicle attempt tasted like nothing 🙁 I’ve been afraid to try again, it was such a bummer. I used frozen organic berries, so I was so let down. Maybe the agave is key? I once made jam that tasted like nothing too…maybe that’s my gift 🙂
Good luck with the crib switch! When we tried to make the move at 14weeks, my son got an ear infection around the same time so we halted that effort…until I realized I had a 16.5+ lb baby in a bassinet with a 16 lb weight limit. Oops!!

Those look soooo good! Since it’s summer until November here in Texas, we have popsicles a lot! My favorites growing up where the Bombs (I think)…that were red, white, and blue. And of course, the orange push up pops! Yum!
