We get stuck in ruts around here sometimes because I tend to rely on the same staples week after week. Luckily with the addition of leftovers, I can usually manage to keep Hailey’s meals very quick (5-10 minutes to put together MAX), simple and well-balanced. Here are 10 meals she’s been chowing down on lately.
Leftover salmon. Sweet potato cubes baked with olive oil, salt and pepper. Sautéed broccoli with olive oil, lemon juice and salt.
Scrambled eggs with peppers. Avocado slices. Orange slices.
Ground turkey, red peppers and black beans sautéed in olive oil with cumin, salt and pepper. Salsa for dipping. Avocado bites.
Oatmeal with chia seeds and honey with blueberries and orange slices.
Leftover gyro lamb burger. Quinoa. Cherry tomatoes. Grapes. Greek yogurt Tzatziki for dipping.
Cream cheese sandwich. Avocado bites. Orange slices.
Leftover chicken mixed with brown rice, broccoli, olive oil and parmesan cheese.
Scrambled eggs with onion, bacon, cheese and orange slices.
Roasted potato wedges with ketchup. Sliced tomatoes with salt and pepper. Goat cheese crumbles with pistachios and honey drizzle.
Roasted sweet potato rounds with ketchup. Edamame with salt. Cheddar cheese.

Maddux’s meals look a whole lot like Hailey’s! Although you plate them much nicer than I do, haha.

You have one lucky little girl!!
Heather Murphy says
Your baby girl doesn’t know how lucky she is! Such nicely prepared, healthy meals!
Ali says
The girls eats well! Those plates look good to me too. I started baby led weaning with my 6 month old today and I was so nervous about choking! Did you do BLW?
Jillian @ Baby Doodah! says
I started BLW with my son when he was 6 months. I was SUPER worried about choking but every time he’d start to gag, we’d just pay close attention and every single time he’d push whatever it was forward. He never once actually started choking.
It was hard, but I remained confident in what the book advised and it seriously worked. Feel free to contact me with questions!! I love helping folks on their adventure w/ BLW.
Brittany Dixon says
Ditto to Jillian. We love BLW! It was definitely a bit intimidating at first, but we stuck it out and have zero regrets. Here is a link to how we got started: http://www.ahealthysliceoflife.com/2012/03/27/our-adventure-with-baby-led-weaning/

Hailey is one lucky little lady! And love all these ideas – the simpler, the better as the year continues for me! 😉
Jillian @ Baby Doodah! says
I love when you share Hailey’s meals because it helps give me ideas for my little guy. We’ve done Baby Led Weaning since he was 6 months old and he is a super eater!!
He goes in spurts though. I find he’ll eat really well one day and then the next he will only eat bread or only yogurt. Did (or do) you ever find that Hailey does the same? My guys 13.5 months old.
Brittany Dixon says
H definitely went through, what I call, a finicky stage. During this she would devour tomatoes one day and hate them the next. I just kept offering and didn’t make a big deal if she wasn’t into them. Eventually she came around. We still have occasional days like that and just let it slide. My main goal is to not have mealtime be stressful or a struggle 🙂
Jillian @ Baby Doodah! says
We definitely keep offering it to him. I just worry that he’s going to continue to refuse and end up living on a diet purely made of yogurt, cheese and blueberries. Ha!
Karen says
She eats so well!! I have a little picky eater on my hands but I was the same way when I was younger so hopefully the older she gets, the better she gets.

Thanks for sharing! I always get great ideas for my toddler from Hailey’s meals that you post as well as the meals others post! We really get stuck in a rut with meals over here! My daughter has an egg, chicken, avocado and mango allergy so it can be hard to come up with meals for her!
Brittany Dixon says
Oh I bet! Those sound challenging to navigate. When in doubt, I’d give spoonfuls of peanut butter 😉 Healthy fats and protein for the win!
Chantal says
Man, those meals look good! I’m hungry!
We feed Penny similar food, though, so I shouldn’t be too jealous haha
Jen says
H officially eats better than I do. So, so impressed by her! Good job, mama!

Did I miss Munchkin Meals? I just moved to Charlotte and I am still catching up on the blogging world. I thought it was today.
Brittany Dixon says
Welcome to Charlotte!!! 🙂
The link up is up and on this post! Hope the move went well!

Hailey’s meals look so pretty! I always forget about orange slices for some reason. Those and edemames!
Amanda says
Such a healthy little eater! Good job at making them look so pretty! 🙂
Alison @ Daily Moves and Grooves says
I would totally eat everything that you’re giving Hailey. I love that you don’t feel the need to give her “special” toddler foods or anything. She’s got quite the sophisticated, healthy palate already!
Christele @ Health n Horizons says
This is my first link up with my 14 month old. Thank you for hosting and I already got some pretty healthy new ideas for next week’s meals 🙂
Laura @ Mommy Run Fast says
Awesome ideas! We do sweet potatoes and avocado often. She won’t touch broccoli these days, but mushrooms are a hit. We like to scramble veggies with eggs, too. Love the bite out of the cream cheese sandwich. 🙂
Laura Hoover @ Smart Eating for Kids says
These are all such great ideas. The chicken, broccoli, brown rice, parm combo is always a HUGE hit in my home, too. Thanks so much for doing the InLinkz on this. I love seeing what everyone comes up with — great inspiration!
Susan (Susonia.com) says
Brittany, your roasted potatoes and sweet potato rounds look so crispy! Mine are always so soft/mushy. What’s your secret? 😉 And I always forget about cherry tomatoes. Thanks for hosting Munchkin Meals!
Brittany Dixon says
I coat them thoroughly in olive oil (mmm ;)), then roast in the oven at 375 for about 40 minutes, flipping them half way through. I hope that helps!!
Matt @ The Athlete's Plate says
I would eat all of these! Just in a larger portion 😉
Heather @ Fit Mama Real Food says
I love all of her meals! I would totally be a happy lady eating them too. I never give Hunter cream cheese sandwiches. Stealing that idea!
Casey @ thislittlechickpea says
I’m so stealing how you cut your oranges! I always thought Ben would try to eat the rinds, but I am sure if I show him how to eat them that way he will do great and it will save me time having to peel them! Thanks again for hosting!
JT@The Faux Foodie Girl says
I absolutely love all of these meals and will be “stealing” them as ideas to give some diversity for Lexi! Thank you!
Neil Butterfield says
This certainly looks like great toddler fare. I am sure that Hayley loves these meals 🙂
