I’ve been meaning to share some recent eats for a while now, and as a result I’ve compiled quite the folder full of meal images. I’m going to share all of them on this post, despite knowing it will stretch on for a while. Many of you say these help with dinner inspiration for those ruts we all inevitably fall into. Breakfast
The kids have been on a pretty solid Dave’s Everything Bagel with cream cheese and a friend egg on top with sliced oranges on the side kick. While I love a bagel, I’ve been letting my Lumen guide me through some metabolism/blood sugar control experiments and I’ve been sticking with more savory option of veggies, eggs, and avocado.
Typically I take whatever leftover veggies are in the fridge and sauté them up in a little butter and plop an egg or two on top. Favorite morning veggies include: mushrooms, onions, zucchini, and kale or spinach. Though more unique options like asparagus and chard will work in a pinch. A splash of hot sauce or some Mateo’s salsa if I’m leaning scrambled tops it off nicely. A meal like this sticks with me for a while, which is why it’s a go-to favorite.
Lunch
Lunches are always the least plan meal for me. I typically pull everything out of the fridge and put together snack plates and salads. I’d like to remember to make a batch of soup on Sunday for the week, but haven’t been making that happen.
Salad 1: romaine, cucumber, red pepper, sliced turkey, walnuts, fresh dill and parsley from my Aerogarden, a homemade Dijon vinaigrette, and some pepperocinis. Salad 2: baby kale and spinach, leftover grilled chicken, red onion, pumpkin seeds, carrots, broccoli microgreens, and Garlic Expressions dressing.
Dinner
Dinner 1: Lightly dressed baby kale, lemon dill baked salmon, and a Daily Harvest new family bake (Use AHEALTHYSLICE for $25 off 9 items, $30 off 14 items, or $40 off 24 items).
Dinner 2: Grilled sirloin, bakes sweet potato, and seedy nutty broccoli salad.
Dinner 1: Slow cooker carnitas rice bowls with sautéed veggies, avocado, sour cream, and salsa.
Dinner 2: Marinated chicken and noodles over egg noodles with roasted asparagus.
Dinner 1: Shepherd’s Pie two ways: vegetarian Shepherd’s Pie and Ground Beef Shepherd’s Pie with Organic Girl’s Caesar salad from Costco and leftover Fresh Chef kale salad.
Dinner 2: Amy’s tomato soup with grilled sandwiches on the panini press. Mine had pesto, chicken, red onion, and sliced tomatoes.
Dinner 1: Mom’s homemade spaghetti with meat sauce.
Dinner 2: Homemade pizza dough topped with marinara, onions, mushrooms, pepperoni, mozzarella, and fresh basil.
Dinner 1: Immunity Boosting Golden Soup with sliced homemade bread and butter.
Dinner 2: Coconut Curry Zoodle Soup but without the zoodles and added in brown rice ramen noodles instead.
Dinner 1: Homestyle Chicken Noodles Soup
Dinner 2: Baked chicken thighs with two different Daily Harvest Bakes, a white bean and artichoke and a wild rice with squash.
Dinner 1: Simple Mexican salads with iceberg, sautéed mushrooms, onions, and pepper, grilled chicken, salsa, and guacamole.
Dinner 2: Suzie’s Chicken casserole.
Dinner 1: Roasted pork tenderloin with a baked sweet potato and sautéed red onion, asparagus, and chard.
Dinner 2: Mixed super greens salad with tomatoes, cucumber, and broccoli microgreens with simple baked salmon over coconut rice.
Dinner 1: White Bean and Chicken Chili
Dinner 2: Greek meatballs made with ground turkey (though I’d recommend lamb or beef or a combination of meats as the turkey version is a little dry) with our favorite Greek salad, tzatziki, and pita.
